Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: Easy meal prep ideas so you don’t survive off of Christmas cookies this week. Prep some Chipotle shrimp bowls, chicken piccata, Mediterranean Orzo Salad, and tuna melt fixins!
And I’m sharing some of my favorite (and simple) Christmas recipes to help you relax and entertain and enjoy the holiday!
To simplify your grocery shopping list:
- Customize the chipotle bowls using ingredients you like or have on hand. Swap the brown rice with cauliflower rice, white rice, or cilantro lime rice. Use refried beans or pinto beans instead of black beans. Sub the tomatoes for homemade salsa, pico de gallo, or mango salsa. Instead of avocado, use avocado salsa verde.
- Serve chicken piccata over mashed potatoes, rice, or buttered noodles.
- Use whatever you like or have on hand in the orzo salad: Artichoke hearts, tomatoes or sun-dried tomatoes, green peppers or roasted peppers, avocado, grilled eggplant, garbanzo or cannellini beans, arugula, dried basil or Italian seasoning!

Meal Prep & Leftover Tips

Mediterranean Orzo Salad: For the perfect bite every time, dice the veggies into bite-sized pieces so you can get a little of everything on your fork. This is one of those dieses that tastes even better the next day to give the flavors time to meld and reach peak levels of delicious!

Chipotle Lime Shrimp Bowls: For meal prep I use my divided meal prep containers to separate the fresh toppings from the heartier beans, rice, and shrimp. This prevents anything from browning too quickly or changing texture. These will last in the fridge for 3-4 days.

Easy Chicken Piccata: leftovers can be refrigerated in an airtight container for up to 5 days and reheated in a lightly oiled skillet over medium heat. Serve over mashed potatoes or noodles, with a side of Parmesan zucchini and/or garlic bread.

Tuna Melt: Make the tuna salad ahead so you have everything ready to go when you’re hungry. Tuna salad will last in the refrigerator for 3-5 days.

Cinnamon Rolls: To make the night before – assemble your rolls, place in the greased pan, cover them with plastic wrap, and refrigerate overnight. In the morning, remove from the fridge (keep them covered) and let them come to room temperature before baking, about 30-40 minutes or so. They may take longer to bake.

Bloody Mary Bar: Have skewers on hand that are long enough to fit the size of your trimmings for maximum load-ability. You don’t want your guests to feel shortchanged on the garnishes.

Puff Pastry Pigs in a Blanket: Instead of cocktail weenies, I prefer using all-beef hot dogs cut in half. This gives these “adult” pigs in a blanket a better flavor (and they’re a little more budget-friendly too).
