Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: Thai red chicken curry, shredded chicken tacos, Greek pork souvlaki skewers, stuffed bell peppers, Mediterranean tuna pasta, mix and match sides, and the BEST carrot cake for Easter weekend.
To simplify your grocery shopping list:
- Apart from the arugula, lemon, and parsley, the easy tuna pasta is made with basic pantry staples.
- For the stuffed peppers, use whatever filling you have on hand or prefer. Swap out the rice for any grain you have in your pantry, use whatever ground meat you have on hand or is on sale, toss in your favorite cheese, and add in any veggies that are in your fridge and need to be used.
- I used micro green pea shoots for the grapefruit salad, but you could certainly substitute them with a light spring mix, arugula, or baby spinach if you prefer.
- Serve the salad with stuffed bell peppers and/or the tuna pasta.
- Use your choice of dried or canned pinto or black beans to make the easy refried beans.
- In the curry, you can use almost any veggie you’d like, but I used a mix of bell pepper, sweet potato, green beans, and carrots.
- Bell peppers are used in the curry and stuffed peppers and can be added to your tacos, skewers, and tuna pasta as well. Carrots are used in the curry and carrot cake.

Meal Prep & Leftover Tips

Thai Red Chicken Curry: Thinly slice the chicken for maximum juiciness. If you’ve ordered red chicken curry at a Thai restaurant before, you’ve likely noticed how wafer thin they shave their chicken.

Shredded Chicken Tacos: Use frozen chicken breasts, and do not thaw! Trust me, the chicken comes out amazingly moist thanks to being braised in chicken stock and tenderizing beer.

Greek Pork Souvlaki Skewers: Never marinate in a metal container. The metal can react with the acid (in this case, lemon juice) so always use glass or take the easy route and use the freezer bag method. And ALWAYS marinate in the refrigerator.

Stuffed Bell Peppers: Customize the filling using what you have on hand. Swap white rice for any grain you like. Use ground turkey, chicken, pork, or Italian sausage instead of beef. Use a different cheese or omit entirely.

Mediterranean Tuna Pasta: Feel free to add a some fresh grated garlic if you love garlic, olives would be a nice addition to this pasta, use anchovies instead of tuna, add some chopped roasted red peppers or sun-dried tomatoes.

The BEST Carrot Cake: There are so many different versions of carrot cake out there. I love making mine with toasted walnuts and sometimes golden raisins as well, but you could use pecans instead, add shredded coconut, do any combo of these, or skip it altogether.

Lemon Rice: You can use leftover lemon rice in your bell peppers.

Tzatziki Sauce: Cucumbers are mainly made of water and when mixed with the yogurt and vinegar will release that water creating the potential for a watery tzatziki sauce. To avoid this, gather the cucumber and place it in a paper towel, squeezing to release the excess moisture.
