This week’s meal plan includes: turkey meatball soup, Frito pie, healthier sweet and sour pork, hamburger stroganoff, chicken piccata pasta, and monkey bread for weekend brunch!
To simplify your grocery shopping list:
- Because the ingredients for the chicken plicata won’t expire too quickly, this is one of those recipes you can shop for at the beginning of the week then make later.
- For the meatball soup, substitute spinach for the kale, add diced tomatoes or fire-roasted tomatoes, and toss in some Parmesan rind to deepen the flavor.
- Frito pie is one of those pantry-staple recipes that uses canned chili beans, enchilada sauce, and a packet of taco seasoning!
- Feel free to use any color of sweet bell pepper you have handy, or what is in your price range for the sweet and sour pork.
- Add or swap out any ingredients to customize your tomato salad. Add kalamata or green olives, avocado, red bell pepper, sun-dried tomatoes, and some salty feta!
- Use leftover frozen rolls from pull-apart bread or buy some extra and bake them off to serve with soup, stroganoff, and/or pasta.

Meal Prep & Leftover Tips

Turkey Meatball Soup: To prepare on the stove top – sear the meatballs, then add everything to a large pot and bring to a boil over medium-high heat. Reduce to low, cover, and simmer until carrots tender and meatballs cooked through

Frito Pie: Don’t sub in tortilla chips, Doritos, or any other corn-based chip — only Fritos will do.

Healthier Sweet and Sour Pork: Save time by prepping the master stir fry sauce in advance. It lasts up to 2 weeks in the fridge and works in a variety of recipes. The cornstarch will settle to the bottom; just give it a good shake before using.

Hamburger Stroganoff: The recipe is versatile—serve it over egg noodles, mashed potatoes, or even rice.

Fried Rice: Chilled leftover rice is the secret to making the absolutely best fried rice ever, so make rice the day before and refrigerate.

Pull-Apart Cinnamon Pecan Rolls: Don’t overload the bundt pan. Resist this temptation, the rolls will rise to the tip top of the pan with exactly this number and you don’t want your rolls to overflow the pan.
