Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

We are welcoming spring with: potsticker rice bowls, grilled BBQ chicken, BBQ blue cheese chicken pizza, my dad’s baked hamburgers, enchilada casserole, fresh mix and match sides, and classic banana pudding!
To simplify your grocery shopping list:
- Regular green cabbage will also work in potsticker bowls instead of Napa cabbage, but the filling will taste much earthier and more pungent.
- Make extra BBQ chicken to use on the pizza, but you can also use rotisserie chicken and store-bought pizza dough to save time.
- Grab lots of fresh corn to use in the BLT corn salad and for Mexican street corn.
- Use Mexican crema instead of the mayo and sour cream mixture for the Mexican street corn.
- Replace the ground beef in the enchilada casserole with lighter options like turkey or chicken. Use homemade or store-bought enchilada sauce.
- To save time, you can use vanilla pudding mix for the banana pudding. But really, the homemade version is easy and makes such a difference.

Meal Prep & Leftover Tips

Potsticker Rice Bowls: The potsticker filling uses just a few ingredients, which is why it’s important that you use the best ones. Fresh ginger and green onions deliver a well-rounded flavor that doesn’t hold a candle to their dried, powdered counterparts.

Grilled BBQ Chicken: Make extra chicken to use on the BBQ chicken pizza.

Daddy’s Baked Hamburgers: The hamburgers are best straight from the oven, but leftovers will last up to 2 days. The buns will soften and could become soggy as they sit in the fridge, so keep that in mind.

Beef Enchilada Casserole: Try my homemade enchilada sauce, or use canned sauce. I’ve found that corn tortillas hold their shape better in this casserole without becoming gummy or soggy like flour tortillas do.

THE BEST Potato Salad: Giving the flavors time to meld is important. If I’m planning on eating the salad the day I make it, I’ll prepare it at lunch so the flavors can build, or I’ll make it a day ahead of time.

BLT Corn Salad: Make slicing the bacon a little easier by freezing the bacon strips for 10 minutes before cutting into chunks.
