This week’s meal plan includes: the best grilled salmon, Reuben sandwiches, Greek lemon chicken and potatoes, pasta fagioli, shrimp scampi, fluffy blueberry pancakes for brunch, and mix and match sides.
To simplify your grocery shopping list:
- Use frozen shrimp for the easiest and most cost-effective option for the shrimp scampi.
- Bone-in chicken thighs with the skin on are going to be more flavorful and resistant to drying out than leaner cuts like chicken breasts, and they always cost less too!
- Use Yukon gold potatoes for the potato salad and Greek chicken because they’re creamier, sweeter, and hold their shape better than other varieties.
- Pasta fagioli is made with lots of pantry staples, and you can really make it your own. Use bacon or Italian sausage instead of pancetta, swap out the kale for spinach, add some crushed tomatoes, use whatever sturdy pasta you have on hand.
- You can use frozen blueberries for the pancakes, just be aware that they are going to turn your batter a blue-green color!

Meal Prep & Leftover Tips

Grilled Salmon: My husband says to (carefully!) place your hand 3 to 4 inches above the grill grates. When you can hold your hand in place for (3) one-one thousand counts, the grill is the right temperature to start grilling.

Reuben Sandwich: Be sure to drain the sauerkraut well so your sandwich isn’t soggy. If you aren’t a fan of sauerkraut, try using coleslaw instead. This is my favorite homemade coleslaw recipe.

Greek Lemon Chicken & Potatoes: My secret to intensely lemony success is to marinate the chicken thighs and the potatoes before baking.

Shrimp Scampi: “Fresh is best” almost always applies to any recipe, but this is the exception. Make shrimp scampi with frozen shrimp for ease and to save some money. Serve over creamy polenta, lemon rice, or make shrimp scampi with zucchini noodles.

Fluffiest Blueberry Pancakes: Resting the batter before cooking allows time to soak up the wet ingredients and also helps the gluten relax. This creates super moist and fluffy pancakes.

The Best Potato Salad: Ditch the mayonnaise and make the potato salad dressing with Miracle Whip. It gives the dressing a hint of sweetness and lots of tang, which prevents the potato salad from tasting heavy or having a gloppy, gluey texture.

Chimichurri Sauce: If you like more heat, add ½ seeded jalapeño when chopping. Not traditional, but it is good.
