An Unexpected (But Always Welcome!) Potluck Salad

This stellar side dish was originally inspired by a deli case salad I used to get at Bristol Farms in Los Angeles. Dressed in a super, SUPER simple vinaigrette, it’s quick to pull together and without the mayo and sour cream gooeyness of most potluck salads, it can sit out safely until the party moves from cheers to chow.
I recently remade this hearts of palm salad at my sister’s house while visiting her in Houston, and it’s been on weekly rotation at our house ever since. I love the leftovers mixed in with fresh greens and whatever protein is left over from the night before’s BBQ.
Apparently I’m just efficient that way. Or I just wish to be.


Heidi’s Tips for Recipe Success
- Choose quality hearts of palm. I like the Sun Pix brand when I can find them. They’re budget friendly and never woody.
- Mix it gently. Once sliced, rings of the hearts of palm will break apart, so don’t get too aggressive with this salad and mix it gently.
- Make it your own. This is a super simple recipe that’s easy to customize using your favorite herbs, vinaigrette, and fresh veggies!
The 5 Main Ingredients

- Hearts of palm — Yep, these come from palm trees! They’re lightly sweet and crunchy, à la water chestnuts.
- Tomatoes — Use any fresh tomatoes you like. I prefer cherry tomatoes in a variety of colors for maximum juicy sweetness.
- Red onion — Run the slices under cold tap water to remove some of their pungent bite, if desired.
- Italian parsley — Gives the hearts of palm salad a Mediterranean flair.
- Red wine vinaigrette — Your choice of oil, red wine vinegar, sugar, salt, and pepper are all that’s needed to dress the salad.

How to Make a Salad with Hearts of Palm
- Toss together the main ingredients. Add the cherry tomatoes (I like to halve mine), hearts of palm, and red onion to a large bowl and gently toss to combine.
- Whisk together the vinaigrette. I prefer doing this in a separate bowl so the ingredients can emulsify.
- Bring it all together. Drizzle the dressing over the salad and toss once more before serving.

Tomato and Hearts of Palm Salad Recipe
Ingredients
Salad
- 3 cups cherry tomatoes , sliced in half
- 1 15- ounce can hearts of palm , drained and sliced into ¼ inch rings
- ¼ cup red onion , thinly sliced or shaved
- ¼ cup Italian parsley , chopped
Vinaigrette
- ¼ cup vegetable oil
- 1 ½ tablespoons red wine vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Combine tomatoes, hearts of palm, red onion and parsley in a large bowl.
- In a small bowl, mix the vegetable oil, vinegar, sugar and salt and pepper until sugar is dissolved.
- Pour vinaigrette over tomato mixture and gently mix. Add more salt and pepper to taste. Serve at room temperature.

Hearts of palm are the best, but leave out the sugar. No need for the extra calories, not to mention that sugar is addictive! True French vinaigrette has no sugar! Lived in Brazil for years where this dish is a staple: never had it once with sugar :(

I agree – the first time I did the salad, I left out the sugar (I always do with salad dressings), then this time I had a group whose tastes I didn’t know, so I cut it in half – half a tsp of sugar. I honestly couldn’t taste any difference, so I won’t be using it again. And 2 people liked it so much they insisted on getting the recipe before leaving the house!
