The Best Tomato Soup Recipe

If I think back to my childhood, tomato soup is at the top of the list of my all-time favorite comfort foods. But unlike my ultra creamy macaroni and cheese or my mom’s spaghetti recipe, tomato basil soup is on the lighter side of the comfort food scale.

Even better, when you have a stash of roasted tomatoes in the fridge, it’s an easy recipe to whip up for an easy dinner with leftovers for lunch the next day.

I’ve seen some recipes for this soup that call for canned tomatoes, but I use fresh tomatoes roasted with garlic and herbs in my tomato soup. Earlier this week I shared my recipe for roasting the tomatoes here, and since I had a jar left over, I decided to update the photos and post for this recipe too.

Soup at our house is a regular menu item, in fact, my husband has gone on an all-soup diet more than once. It’s also likely that our early marriage was built on tomato soup with grilled cheese. It’s not even Christmas yet and I’ve already been looking toward the new year and listing out a few of the goals I plan to hit next year.

One of the biggies in my new year goal making sessions is to eat more meatless meals. It’s easy for me to do for breakfast and lunch, but where I tend to run into a road block is when I make meatless dinners because that’s not exactly my husband’s idea of a meal. You could say I’m obsessed with roasting tomatoes.

A few weeks ago I photographed the new winter menu of one of my favorite clients, Deer Valley Resort in Park City, UT. If you haven’t yet been to Park City and Deer Valley, it’s a destination to put on your bucket list, not only for winter skiing, but truly any time of the year.

This time around we shot photos for the new menu items for their low-key bar and restaurant The Brass Tag. But where does that name come from? Back in the day aka around 1890, the silver boom was huge in Park City and local miners would hang a brass tag before entering the silver mines to work. When the day was done, if there was tag still hanging on the board, it was time to start a search for the miner. Think of it as the low-tech GPS system of yesteryear.

Whiz, bang, boom. 2014 seems to have come and gone in the wink of an eye. Or was it just that jolly old man in the red and white suit? Either way, 2015 is already shaping up to be fit for a king.

But wait? Who wants to be some old, rolly-polly bully who sloths about his castle draped in old furs while wielding turkey legs and brandishing silver goblets of the most expensive wine as servants attend to his every whim.

Maybe I’m painting too rosy a picture here because that actually doesn’t sound half bad.

Yep, he has a megaphone because he’s in a band, you know, for “special effects” and stuff. He also has these weirdo 1960’s goggles and a suit covered in Christmas lights—because he’s in a band.

But that’s another story for another day.

Today’s story is that we’re all banding together and shouting at the top of our lungs—or into said megaphone if you have one handy—we’re shouting, “GOODBYE FROZEN TUNDRA, and good riddance.” Why? Because (happy dance) this week marks the official first day of spring. Yes!

But that certainly doesn’t signal the end of eating savory soups and stews. Heck, this is just the beginning.

Today’s post started out as an assignment for my intern Courtney and turned into a tasty lunch for me. See, I’m smart that way.

While Courtney generally helps me with design and layout duties, this week she wanted to play in the kitchen and I said, “Go for it girlie! Let’s check out your chops!” She chose her favorite ingredient combo, created the recipe and after we played around taking pics in the kitchen she wrote this post. My stomach says she came up with a winner and I know you’ll agree after you make her vegetarian Sweet Potato and Black Bean Burritos.

There are a few things in life that make me really happy. A well designed book cover, a beautiful fall day, the sound of my kids playing nicely with each other – without me.

When it comes to food, nothing compares to the smell of diced onion and minced garlic over an open flame. I don’t know why but it makes me feel like I know what I’m doing in the kitchen. I feel legit. I feel happy. And once your onions are nice and translucent, the possibilities are endless.

While most of us associate the aroma of onions and garlic with the start of favorite comfort foods like chicken pot pie, meatloaf or just about any Italian or Mexican meal, today we’re going full-on vegetarian.

I’m not usually one to pepper my blog with inspirational quotes from famous/infamous people. And you absolutely won’t see me write, “According to Webster’s dictionary…” when I’m stumped on how to introduce a post, when the creative juices simply aren’t flowing. It’s just kind of the cheater way out in my opinion, but hey, I’m not judging. And besides, doesn’t everyone use Wikipedia now?

But for the reasons I have today, I thought these quotes fell into the appropriate category because they indeed describe the lack of originality, or at least the increasing commonality, of how recipes come about and how they’re shared.

I mean, how many different ways, really, are there to cook a burger or make a classic chicken divan casserole? And what about pound cake? Prime example of how ingredients can’t be copyrighted. It’s all in how you describe the process that makes it your own.

This weekend is a biggie for one 8-year-old about to be 9-year-old in our house. Birthday time!

If you’ve followed be for very long, you know my daughter Smudge prefers pie over cake any day, which means I’ll be making and adorning her favorite Yellow Cake Pie with candles for the third year in a row. This year I’m going to pardon the mousse pudding mix in favor of the homemade pudding I made in Lauren’s Chocolate Cream Pie recipe mixed with some whip cream for loft. 

I’m pretty sure it’s going to be a hit once again for the twelve 9-year-olds who are sleeping over. All those girls in one house, high on sugar and water slides and karaoke? Why oh why do I do this to me and my husband? Oh, that’s right. Because I’m a mom to a rock-star-lover-girl! I’d do anything for her, especially on her birthday. 

Once we’ve sent the gaggle of girls home with their own parentals, it’ll be time to get the family birthday BBQ into high-speed prep. While we have a few menu ideas on the short list, we haven’t quite made up our minds as to which direction we’re going. Traditional cookout, Mediterranean or something Asian inspired? Any input here readers?

If we go for the traditional grilling route, this Grilled Artichokes with Garlic Butter recipe I created for Go Bold With Butter would be tops on the list. I made them for dinner just two nights ago since my favorite artichoke producer finally showed up in Costco.

I don’t know if I’ll ever eat a choke with plain butter and mayo again thanks to the caramelized garlicky chunks I now scoop up with each leaf. More napkins please.

Grilled Artichokes with Garlic Butter

Prep Time 20 minutes
Cook Time 35 minutes
Total Time 55 minutes

Ingredients

  • For the Artichokes
  • 2 large artichokes
  • 1 tablespoon black peppercorns
  • 4 cloves garlic
  • 1 lemon halved
  • Olive oil
  • Kosher salt and freshly ground black pepper

  • For the Lemon Garlic Butter
  • 1/2 cup 1 stick butter
  • 2 lemons zested and juiced
  • 2 cloves garlic thinly sliced
  • 1/2 teaspoon kosher salt
  • Leaves from 6-8 sprigs of fresh thyme

Instructions

  1. For the Artichokes
  2. With a serrated knife, cut artichokes into quarters and cut sharp tips of leaves off. Scoop out the prickly center part of the artichoke, and discard. Immediately rub the cut side of the artichoke with a lemon half to help avoid yellowing. Place artichokes in a large stockpot filled with cold water.
  3. Add peppercorns and garlic cloves. Squeeze the juice of the lemon into the water and add the leftover lemon skin/peel to the water. Bring artichokes to a boil, reduce to simmer and cook for 20-25 minutes or until artichoke leaves easily pull from the head and the bottoms of the artichokes are tender.
  4. Remove from the stock pot and drain.
  5. Prepare a grill with hot coals or a gas grill over high heat. Drizzle artichokes with olive oil and kosher salt and pepper.
  6. When grill is hot, place artichokes on grill and cook for 3 minutes each side or until nice grill marks appear. Remove and serve immediately or at room temperature with garlic lemon butter (recipe follows).

  7. For the Lemon Garlic Butter
  8. Melt the butter in a small saucepan over low heat. Remove from heat and allow the solids to cool slightly, then skim the fat solids from the clear butter below and discard the solids. Add lemon zest, garlic cloves, kosher salt and fresh thyme and cook on medium until garlic browns slightly and becomes aromatic, about 5 minutes.
  9. Add lemon juice to butter mixture and mix well.
  10. Drizzle over artichokes or on the side as a dipping sauce.

Before I talk about today’s recipe, I want to send my heartfelt thoughts to those that were affected by the bombing yesterday at the Boston Marathon finish line. Thankfully my friend, and many of yours, Dara of Cookin’ Canuck and her family—in Boston to cheer on her husband Steve who crossed the finish line just 3 minutes before the bombing—have let us all know via Twitter that they are fine even with the blast happening just one block and three minutes away from them.

Timing. It’s a tenuous thing.

My thoughts and prayers go out to all of the families and participants, volunteers and emergency care workers who were affected, especially those that could not walk away. Special prayers to the family of the 8 year old who was killed in this manic event. That hits way too close to home. I cannot imagine.

Why did this happen? Why do any of these deranged plots happen? What are people thinking? I just can’t wrap my head around why anyone, ANYONE, thinks this is a good way to prove a point, gain notoriety or to simply create chaos through terror.

The only way I know how to address this is to love my loves and look for beauty and unselfishness in this unstable world. I hope you can too.

I’m very much a creature of habit. Or more likely a creature of cravings. When it comes to going out to eat I can rarely motivate myself to deviate from my standard favorites, especially when it comes to any sort of ethnic food. Mexican food: I always gravitate to the Chile Rellenos. Sushi: I must have Spicy Tuna anything.

When it comes to Italian, its rarely a question of what to order once the waiter rolls around: Gnocchi please. The sad thing is, at most Italian eateries gnocchi isn’t always standard fare. That’s why Sea Salt in Salt Lake City is one of my favorite spots to eat, since they have at least 5 different gnocchi recipes on the menu.

I have a version of a salad nearly every day for lunch and it’s often a dish I’m requested to bring to pot luck dinners. It usually includes some sort of protein (rotisserie chicken, tuna, leftover salmon or chickpeas), fresh veggies (roasted tomatoes or beets, avocados, maybe peas) and just a sprinkling of firm cheese (feta or blue are my faves.)

But it wasn’t until recently that I veered from my trusty spring mix or crunchy hearts of romaine to jump into the land of kale as my main salad base. I’ve added it to several of my favorite dishes like my Kale and Cabbage Coleslaw and White Bean and Pumpkin Pork Chili but for some reason it didn’t make it into my usual lunch crunch rotation.

This week heralded a week of pumpkins featuring both a savory and a sweet recipe option. As it should! Eating local and in season gives a bump in stimulating the local farming economy and its also just being plain healthy. Keeping it simple and unprocessed as often as we can.

So to end out the punkin’ posts I’ll leave you with this tasty ditty of a recipe featuring my favorite orange orb all mashed up in my Pumpkin Manicotti. I know! Will I ever get tired of pumpkin and sage together? Bear with me friends because it’s highly doubtful.

Pumpkin Manicotti

Ingredients

  • 1 8 ounce package manicotti noodles
  • 3 cups milk
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 8 tablespoons 1 stick butter, divided
  • 1/8 cup fresh sage leaves thinly sliced
  • ¼ cup flour
  • 1 1/2 cup Ricotta cheese
  • 1 cup pumpkin puree
  • 1 egg
  • 1/2 teaspoon nutmeg
  • 1 ½ teaspoon salt divided
  • 1 cup Mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated

Instructions

  1. Preheat oven at 350°F. Bring a large stock pot of water to boil. Once water comes to boil, add oil and salt water well and cook noodles for 5-8 minutes or until al dente. Drain and rinse noodles and set aside.
  2. In a saucepan, bring milk to a boil, lower to simmer and add garlic. Simmer for 15 minutes until garlic flavor infuses milk. Remove garlic from mixture and discard.
  3. In a separate small saucepan, melt 2 tablespoons butter, add sage leaves and cook until crisp. Remove sage leaves from butter pan to drain and set aside. Add 6 tablespoons butter to remaining sage butter in pan, and melt over medium heat. Whisk in flour and cook for 2 minutes. Add reserved garlic-infused milk mixture and cook until thickened, about 10 minutes, whisking so sauce does not stick or burn. Season with ½ teaspoon salt, remove from heat and let cool.
  4. Layer a 13 X 9 inch pan with 1/2 cup of sauce.
  5. In a large bowl, mix Ricotta, pumpkin puree, egg, nutmeg and salt. Add ½ cup Mozzarella and mix. Fill a large Ziploc freezer bag with pumpkin mixture, clip one corner with a ¼” cut and pipe manicotti tubes with Ricotta cheese mixture so a little bit overflows on ends.
  6. Place manicotti tubes side by side in pan, repeating until you run out of shells and filling. Spoon remaining sauce on top of shells, top with remaining Mozzarella and Parmesan cheese. Sprinkle sage leaves on top of cheese, cover with foil and bake for 30 minutes, remove foil and bake for another 10 minutes.

Last week Smudge and I picked up a few sugar pumpkins at the farmer’s market, both for decoration and to cook with. She isn’t so sure she’s ready to relinquish her babies—Bob, Harry and Babycakes—to me and my menu making plans just. quite. yet.
