This Is the Perfect Way to Use Up Leftover Lobster

In the early 2010s, I was lucky enough to be selected to judge the Wisconsin Cheese Grilled Cheese Academy annual grilled cheese recipe showdown. (Eating 15 grilled cheese sandwiches in one sitting? Sure, sign me up.)
This lobster grilled cheese was the grand prize winner of 2013’s recipe showdown, and I’ve been making it ever since.
Two pieces of buttery sourdough sandwich layers of creamy mascarpone, gooey provolone, juicy chunks of lobster, and peppery arugula. But what really gives this recipe a kick is the chili paste that’s mixed into the butter that’s spread on the toasted top and bottom of the sandwich.
Heck yeah, I’ll vote for that.

Ingredient Notes

- Cooked lobster — You can use leftover lobster or cook it especially for this recipe. You can follow the instructions in my lobster roll recipe (just cook the lobster meat in a little butter and omit the mayo mixture).
- Chili butter — Sounds so fancy, but it’s really just softened butter that’s been mixed with a spoonful of chili paste.
- Cheese — I used a blend of mascarpone for creamy richness and provolone for a serious cheese pull.
- Scallions + tomatoes — Some finely diced veg elevate the grilled cheese and prevent it from tasting too heavy.
- Arugula — Its peppery bite offsets the mascarpone and provolone.
- White bread — I prefer using country-style white bread rather than plain sandwich bread. You can swap in another bread, just make sure it’s super soft and not too crusty.

How to Make a Lobster Grilled Cheese
- Make the mascarpone filling. I like to stir the chopped tomato and scallions into the mascarpone, which acts kind of like a glue and prevents the veg from falling out.
- Assemble the sandwiches. Layer your grilled cheese in this order: mascarpone mixture, 1 slice of provolone, cooked lobster, arugula, 1 more slice of provolone, then the second piece of bread (which has also been smeared with mascarpone).
- Spread the outside with chili butter. You could do this before assembling the sandwiches, but then you’d wind up with chili butter all over your hands.
- Cook in a buttered skillet. Yes, more butter! This adds flavor and ensures the bread browns beautifully as it cooks.

Lobster Grilled Cheese Recipe
Ingredients
- 6 tablespoons butter , room temperature (divided)
- 1 teaspoon chili paste
- ½ cup mascarpone cheese , softened
- 2 scallions , thinly sliced (white and green parts)
- ¼ cup diced tomato
- 4 slices country-style white bread
- 4 thin slices provolone cheese
- ½ cup arugula
- 1 cup cooked lobster , coarsely chopped
Instructions
- Prep the chili butter. In small bowl stir together 4 tablespoons butter and chili paste. Set aside.
- Prep the mascarpone mixture. In medium bowl stir together the mascarpone, scallions,and tomatoes.
- Assemble your sandwiches. Dividing the ingredients evenly between two sandwiches, spread each slice of bread with the mascarpone mixture, top with a slice of provolone, top with arugula and cooked lobster, then finish with another slice of provolone. Place the second piece of bread on top, mascarpone-side down.
- Cook the grilled cheese sandwiches. In large nonstick skillet, melt 2 tablespoons butter over medium heat. Place sandwiches in skillet and spread the chili butter over sandwich tops. Cook sandwiches until bottom bread is golden brown, about 3 minutes. Using a spatula, carefully flip sandwiches, pressing down gently. Continue cooking additional 3 minutes, or until both sides are golden brown and filling is warm and melted.
