The Perfect Potluck Salad That Can Be Prepped in Advance

Calling all simple salad lovers! This 10-minute, few-ingredient, make-ahead cucumber salad tossed in a creamy yogurt dressing has your name written all over it.
The mix of fresh dill and mint with a slight bite of garlic is what makes this recipe truly special. It gives me tzatziki vibes, and I think I could eat it all day. And since this recipe is made with non-fat Greek yogurt instead of mayonnaise or sour cream, whaddya know? I CAN!
Bonus: This salad holds up well at room temp and is perfect for the pot-luckians, and for me at least, doesn’t turn soupy or drippy. Ew.


Heidi’s Tips for Recipe Success
- Cucumbers might be my husband’s favorite veg/fruit, so he’s very particular about his varieties. This time around I used English cucumbers to minimize the seeds with a few small kirby cucumbers to add shape to the dish.
- To test your cukes, press the ends of the cucumber. If they’re soft, they’re no good. Next! Move onto the next one.
- As with any creamy salad, this cucumber version tastes so much better after it’s had time to chill for an hour or so. This gives the cukes time to release some of their juices and mingle with the yogurt dressing, bringing the whole dish together nicely.
How to Make This Cucumber Yogurt Salad in 10 Minutes Flat

- Thinly slice the cucumbers and red onion. If you own a mandonline, now’s the time to bust it out. Otherwise, use a sharp chef’s knife and do you best to slice them thinly. If your cucumber has big seeds, scoop them out before slicing.
- Make the Greek yogurt dressing. It’s a simple blend of plain Greek yogurt, minced garlic, lemon juice, fresh mint and dill, and of course a little salt and pepper.
- Toss, then chill. You can stop there and serve the cucumber and yogurt salad right away. But it’s really best after an hour in the fridge. Just do what you have time for!
Only Have Regular Yogurt on Hand? That’s Fine!
I prefer making this cucumber salad with Greek yogurt for richness and creaminess, but regular plain yogurt works too. Your dressing will be runnier, that’s all.

Creamy Cucumber Yogurt Salad Recipe
Ingredients
Salad
- 3-4 seedless cucumbers , sliced thinly
- ¼ red onion , thinly sliced and roughly chopped
Yogurt Dressing
- 1 cup non-fat plain Greek yogurt
- 1 clove garlic , pressed or minced finely
- juice from ½ lemon
- ¼ cup chopped fresh dill , plus more for garnish
- ¼ cup chopped fresh mint , plus more for garnish
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Toss the cucumbers and red onion in a medium to large bowl.
- Mix the yogurt, garlic, lemon juice, dill, mint, salt and pepper together in a small bowl then add to the cucumbers and toss to coat.
- Add more salt and pepper as desired and garnish with more mint and dill. Refrigerate for 1 hour before serving.

I’ve been making a similar Cucumber Salad for a long time (my mom’s recipe), but I always used ‘lite’ sour cream, and I never thought to add mint (even though it’s growing in my garden.) I’m always open to a ‘new twist’ to any of my old favorite recipes, so I’ll definitely try this one. I only wish that I could find fresh dill at my local supermarket, any time I need it!
