Hello and happy Friday!
Last Friday I returned home from Cincinnati where I attended Kroger’s Zero Hunger Zero Waste event with Master Chef Graham Elliott. It was my third year attending the event and I was a whole lot more relaxed this time around. Unlike the first year where my husband and I were in a sweating-it-out-in-the-kitchen-stride competition with local chefs to create an on-the-fly dish made with rescued ingredients that had been delivered to Cincinnati’s local food pantry, and then make enough to serve 250 at the evening’s big Zero Hunger Zero Waste event hosted by Kroger, this year I was in an attendee-only mode.
Whew. That’s just one reason I was honored to attend, meet Chef Graham Elliott, and learn more about how we can each make small changes that add up to big differences.
Did you know that:
- 40% of food produced in the U.S. never makes it to our mouths
- 50% of all fresh produce goes to waste
- Every one of America’s 42 million food-insecure residents could be fed 3X over with the country’s food waste
Kroger and the employees dedicated to making big changes become a reality, have committed resources, time, and initiative to become a zero waste company by 2020 and a zero food waste company by 2025, plus accelerating more balanced meal donations to 3 billion meals by 2025.

Our daughter had late-evening basketball games all this week so this fave dinner was totally on the menu. Fast, easy, heathified.

These crispy chicken tacos with pimiento cheese don’t claim to be easy, but they ARE worth it!
Spring salads you need now:
- This take on lobster Niçoise salad
- Going nuts for this crunchy chopped broccoli salad
- Avocado, citrus, kale. It doesn’t get fresher than this salad.
- Mediterranean chickpea egg salad. I’m totally on board.
- This spring BLT cobb gets all up in there and is simply gorgeous.
This sheet pan sausage and veg dinner would be so good over rice or noodles.
OMG, this is 100% my favorite flavor of pizza.
I liked these noodles over on the Instas and immediately slobbered all over myself.
A pasta sauce that’s ready in 25 minutes, plant-based, and grandma-originated. Yes please.
Yo quiero Taco Bell sauce packet pool floats! Ha! But actually this may need to become my Taco Bell-obsessed husband’s Father’s Day prez.
Listening to your inner microphone: the skill we need to be teaching our kids (and ourselves too.)
More solo dates to take yourself on this weekend – because you need to take the time to check in with yourself, too.

I was watching RHOBH when Teddi Mellencamp (yes! John Mellancamp’s daughter) was wearing this t-shirt so after some internets sleuthing I had to have it! Totally melds my 8th grade love of lips and rainbows and I should have it any day. I.can’t.wait. (and since the rest of my wardrobe is pretty much from Target, I’m okay with the splurge.)

So as usual I can easily be swayed by well-designed packaging which made me buy and try this razor. I really like the grippy handle and it’s arched neck seems to get into all those delicate spots.
Dark circles be gone! Re-ordered my favorite under-eye concealer.
And I’ve tried a bunch of different brands of foundations, but this is the one I come back to invest in every time.
This Spotify playlist may be intended for throw back Thursday, but it’s too good not to listen to every day.
