Hello! And happy May-day Friday!

In my mind, and in my stomach, it is officially spring/summer eating time! I’ve been creating and testing new summer recipes, which means the grill has been fired up! Since January, I’ve been SO GOOD about cooking food from our freezer instead of always buying new from the store, unless it’s for a new blog recipe, of course. So when I discovered two beautiful pork chops, I rescued them from freezer burn alley to make our favorite Mediterranean pork chops. We went with our usual sides of tomato avocado salad and lemon rice with dill, and the meal delivered pure summer joy. You’ve got to try it for yourself!
In other countries, May 1, or May Day aka today, is a celebration of spring and a global holiday for workers’ rights. I’m down! I’ve heard of dancing round the Maypole, a jig I won’t be jigging this year, but I could definitely get on board with bringing back the tradition of creating May Day baskets to share with friends and family, or making to hang on the doors at my mom’s assisted living. I’d better get hopping if I’m going to make it happen! These Pinterest ideas are delivering some fun inspiration.

One of my favorite things as a kid was being a pen pal with my grandma in San Francisco.
