Goodbye Mozzarella, and Hello Burrata!

Eaten two nights ago with a smattering of friends, they consumed this entire burrata caprese salad in about 5 minutes flat.
With just a few quick slices of the knife by my friend Michelle and a run to the garden for fresh basil leaves by Smudge & E, the crowd was then polled, “Balsamic or not?” and with an enthusastic “YES!” Angie added a generous drizzle of balsamic vinegar.
There was no over-thinking the food styling when we threw together this tomato caprese with fresh burrata, just push it all in the platter and make it fit.
Sometimes the simplest ingredients speak for themselves. ‘Nuff said.

Just 5 Ingredients Are All You Need

- Burrata — This fresh Italian cheese has an exterior of tender mozzarella and is filled with lush cream and mozzarella curds. Wait to slice open the burrata until the caprese’s on the table so you can hear the oohs and aahs as the cream spills over the fresh tomatoes.
- Tomatoes — We used big, beefy heirloom tomatoes but you can use any garden fresh variety you like.
- Fresh basil — Fresh is a must! Don’t sub dried basil or your salad will taste seriously lacking.
- Balsamic vinegar — A good quality bottle will be more sweet than sour.
- Olive oil — I like to use a fruity extra virgin olive oil for finishing off the dish.
How to Make a Caprese Salad with Burrata

- Slice the tomatoes and arrange around the burrata balls. We like our tomatoes sliced nice and thick, but you can cut them however you like best.
- Garnish with basil. If your basil leaves are extra large, tear them once with your hands (avoid cutting them with a knife, which bruises them).
- Dress and serve. A few glugs of good-quality olive oil, balsamic, and a few cracks of salt and pepper are all you need to dress this simple burrata caprese.
Ingredient Swaps
- Replace the burrata with fresh mozzarella for a traditional caprese.
- Use roasted tomatoes instead of fresh if you’re craving caprese in the dead of winter.
- Swap the balsamic with golden balsamic for a gentler, fruitier flavor profile.

Burrata Caprese Salad Recipe
Ingredients
- 2 balls fresh burrata cheese
- 4-6 heirloom tomatoes , sliced
- handful of fresh basil leaves
- extra-virgin olive oil , (the fruitier the better)
- good quality balsamic vinegar
- kosher salt and freshly ground black pepper
Instructions
- Arrange the tomatoes on a platter around the burrata cheese balls. Sprinkle with fresh basil leaves then drizzle with a healthy pour of extra virgin olive oil. Drizzle with balsamic vinegar and season with kosher salt and freshly ground black pepper.
- Serve at room temperature.
