Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: chipotle lime shrimp bowls, easy spaghetti and meatballs with garlic bread, pineapple chicken and fried rice, Shepherd’s pie, and coconut pecan banana bread muffins.
To simplify your grocery shopping list:
- You can use fresh or frozen shrimp for the bowls, use refried beans or pinto beans instead of black beans, sub store-bought salsa for the tomatoes or homemade salsa, add corn, bell peppers, or red onion, and add some extra crunch with shredded iceberg or cabbage.
- If your grocery store sells pre-sliced cutlets for the pineapple chicken, you can purchase those, but more often than not I just buy breasts and cut them in half lengthwise to make my own.
- I used ground beef for the stuffed pepper soup, but you could also use Italian sausage, or ground chicken or turkey.
- Most of these dinners are hearty enough to be a meal on their own, but garlic bread just makes everything better. And maybe throw in a side salad or 2 throughout the week. Buy some salad kits to save time.
- Additional mix-in ideas for the banana muffins include chocolate chips, dried fruit, various nuts, and so forth.

Meal Prep & Leftover Tips

Chipotle Lime Shrimp Bowls: I always prefer pink shrimp (usually from Key West) for their sweetness over Mexican or Indonesian black shrimp. To keep this a quick recipe, purchase your shrimp already peeled and deveined.

Spaghetti and Meatballs: I don’t fuss with the mess of frying the meatballs. Instead, I bake them until they’re super tender and juicy on the inside and nicely browned on the outside, without having to sear them first.

Pineapple Chicken: Purchase canned pineapple that’s packed in its own juices. Avoid the kind packed in syrup, which will make the sauce more sweet than sour.

Shepherd’s Pie: Traditional shepherd’s pie typically features a mixture of veggies and ground lamb. However, I prefer making this easy shepherd’s pie recipe with ground beef cooked in a savory gravy.

Stuffed Pepper Soup: This soup is perfect for using up the odds and ends left in your fridge at the end of a busy week — toss in any veggies you have leftover.

Coconut Pecan Banana Bread Muffins: These banana muffins are terrific for freezing. Allow them to cool to room temp before sealing them inside a freezer bag. To reheat, either set them on your counter to thaw or gently reheat them in the microwave.

Fried Rice: Chilled leftover rice is the secret to making the absolutely best fried rice ever. Make some rice the night before and refrigerate overnight.

Garlic Bread: Make the garlic butter in advance to save time. The garlic butter lasts in the fridge for at least 1 month! Serve Garlic bread with spaghetti and meatballs and the stuffed pepper soup.
