Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week we are going on a little international trip and are making crispy chicken Milanese, enchilada casserole, American goulash, white bean chicken chili, and Thai curry with shrimp with mix and match sides and homemade Irish cream!
To simplify your grocery shopping list:
- Arugula used for the chicken Milanese and the arugula side salad.
- Pork or chicken can be used for the chicken Milanese.
- You can replace the ground beef in the goulash and enchilada casserole with ground turkey or chicken for a lighter option.
- Ground chicken or rotisserie chicken can be used for the chicken chili for a cheaper alternative to chicken breast.
- Bell peppers used in goulash, shrimp curry, and toss some in the enchilada casserole for some added nutrition.
- A decent amount of canned pantry staples in this week’s plan, along with some fresh veggies and herbs!

Meal Prep & Leftover Tips

Chicken Milanese: Try this recipe with a pork cutlet instead of chicken (you can follow this preparation for the meat) and still serve with the arugula salad.

Beef Enchilada Casserole: Try my homemade enchilada sauce , or use canned sauce. I’ve found that corn tortillas hold their shape better in this casserole without becoming gummy or soggy. Switch out the beef with chicken or turkey for a lighter dish!

American Goulash: You’ll be surprised at how much the ground beef goulash thickens after the macaroni is added. If it thickens too much for your liking, just stir in a little extra beef broth.

White Bean Chicken Chili: Crushed tortilla chips in a pot of chili might sound strange, but they help to thicken the chili, infuse it with a much-needed dose of salt, plus they add texture galore.

Thai Coconut Curry With Shrimp: To avoid this dish becoming too salty, please use a high-quality fish sauce like the one I recommend, or add just 4 tablespoons of sauce and then taste it, and add more to your liking.

Homemade Baileys Irish Cream: Keeping in line with authenticity, I used an Irish whiskey to make my Irish cream. Jameson and Bushmills are some of the more familiar brands, but a bespoke brand would be excellent to try too.

The BEST Dinner Rolls: This recipe uses rapid-rise or quick-rise yeast. I prefer rapid-rise because it’s fast-acting and cuts out an extra step and you can simply mix this yeast right into your dry ingredients.

Arugula Apple Salad: Arugula is a peppery green that lends itself well to many dishes and a variety of flavors and can be served as a side for any and every dinner this week!
