This week’s meal plan includes: My grandma’s meatloaf and minestrone soup recipes, chipotle chicken taquitos, French onion meatball orzo, lemon herb roasted whole chicken, no-bake chocolate cookies, and mix and match sides!
To simplify your grocery shopping list:
- Oats used in meatloaf and no-bake chocolate cookies.
- Beef stock used in minestrone soup and French onion meatball orzo.
- While the meatloaf and meatballs both call for ground beef, feel free to use a lighter meat, or whatever is on sale, like ground turkey or chicken. Or even use frozen meatballs for the orzo.
- Use a good Parmesan for the minestrone soup and garlic bread. Parmesan would also be amazing on the French onion meatball orzo and asparagus.
- Use any vegetable trimming or leftover veggies, along with bones from roast chicken, and make chicken stock. Chicken stock freezes well and it’s always great to have on hand during soup season!

Meal Prep & Leftover Tips

Grandma’s Meatloaf: Because the onion and garlic are used raw in this recipe, chop, mince, or even grate them finely so they easily incorporate into the mixture, and cook evenly with the beef. Personally, I like tasting the bits of onion in my meatloaf, so I cut my onion in between a fine chop and a mince.

Minestrone Soup: A source of this soup’s distinctive minestrone flavor comes from the awesome umami of Parmesan cheese. I like to cook the broth with a few leftover rinds of Parmesan cheese.

Chipotle Chicken Taquitos: To make then even easier to put together, use pre-cooked chicken breast or rotisserie chicken. Serve them with Avocado Salsa Verde, my favorite Mexican rice or beans, Chopped Mexican Kale Salad or a crunchy Caesar Salad for a complete meal.

French Onion Meatball Orzo: You’ll want to make the meatballs first since caramelizing the onions will require a little bit of babysitting. The meatballs are super quick and easy to throw together and they bake in the oven. Or use your favorite frozen meatballs to save time.

Lemon Herb Roast Chicken: Pull your chicken from the refrigerator 30 minutes before roasting to ensure a more even cooking time. Meanwhile, preheat your oven and position a rack in the lower third of the oven. You don’t want the top of your bird burning!

Creamy Avocado Salsa Verde: While technically you could just dump all of the ingredients into the blender and go, my clunky old blender needed a bit of a help so I gave everything a super rough chop. If you have a swanky high-powered blender, you might be able to skip this step!

Garlic Bread: Use Ciabatta rolls in lieu of Italian bread because the butter will melt into all those lovely nooks and crannies!

Chocolate No-Bake Cookies: The first step involves bringing the milk and sugar mixture to a boil and then cooking it for a full minute. This helps the sugar dissolve and is the big secret to making no-bake cookies stick together.
