Hello and happy Friday!
Do you know how you get into a groove that some people may judge as a rut? That’s me and this chopped salad. I know I shared a photo of it a few Fridays ago but I cannot stop making it! It’s just kind of perfect. Chickpeas for protein, lots of crunchy veg, plus salami and cheese that give all the best Italian sub vibes. I added some chopped chicken breast because why not? Be like me and put this one on repeat!
On another note, I want to once again say how much I appreciate readers like you. I’ve been publishing a weekly list of Friday Faves for going on 13 years! THIRTEEN YEARS OF FRIDAYS. That’s a lot of listing :) So when I get an email like the one below, it reaffirms the reason we keep pushing these babies out:
