This post is proof I practice what I preach. Earlier this week I shared an email with my newsletter subscribers (you can sign up here) espousing my love of salmon, a few fave salmon recipes, and why you should be making it more often this summer. So, back to me practicing what I preach…It’s that time of year for the sockeye salmon run (June-July). We took full advantage of this fresh salmon season and picked up a slab of sockeye. My fave way to cook salmon is when my husband does the honors on the grill. My man’s grilled salmon recipe/method definitely deserves the honor of being a Friday Fave and our dinner should absolutely be on your weekend menu. Our side dishes were inspired by a Memorial Day dinner we had at my cousin Erin’s lovely home where she effortlessly hosted us with both grilled salmon and chicken on her menu. Looks like the love of salmon runs in the family :). It was so good I followed her lead and served our grilled salmon with coconut rice, grilled zucchini, and a tomato and cucumber salad that I will have to write up for the blog and post soon (you can make this one until I get the new one done). Heledos Mexican popsicles and watermelon were dessert, making it a simply perfect dinner by a hostess who makes it all look easy. Erin, I love you!
BTW, it’s my baby Smudge’s 19th bday! I cannot wait for her to get home from Asia in 2 weeks so we can celebrate in person together!!
