Hello hello and happy Friday!
With nearly a foot of snow falling outside, I was snug as a bug in our cabin kitchen while raiding the freezer, fridge, and pantry for dinner inspiration. Luckily, my husband had gone to the grocery store before I arrived and stocked up on the essentials. After a quick perusal, I realized I had all I needed to make one of my favorite weeknight meals, this Thai coconut chicken and rice dinner. So good and so comforting and a dinner I’ll be making regularly in what I’m hoping will be a very wintery winter to come.
Daylight savings time ends this weekend so remember to set your clock back. Some think it already has, but it hasn’t yet. Will the tradition ever change?
