I’ve got a few classics like my cheesy Buffalo chicken dip, French onion dip, and queso dip, and this chorizo dip is another one that knocks it out of the park with big flavors and creamy, cheesy goodness. It starts with sweet and jammy caramelized onions and spicy chorizo that get folded into a creamy blend of cream cheese and mayo. That mixture then gets topped with plenty of mozzarella cheese and baked in the oven until gloriously golden and irresistible.

How to Make Chorizo Dip
- Cook the chorizo. Remove chorizo from the casing and cook over medium-high heat for about 10 minutes, chopping with a spoon and stirring occasionally.
- Caramelize the onions. In another skillet, melt butter over medium heat and add onion. Add thyme, season with kosher salt, and lower heat to medium-low and cook onion for about 20 minutes until onions become soft and caramelized.
- Mix and fold. In a medium-sized bowl add cream cheese and mayonnaise and mix well until smooth. Add mozzarella cheese, caramelized onions, and green onions, and mix well. Gently fold in chorizo. Pour into a 2-cup baking dish.
- Bake until bubbly. Bake the chorizo dip at 350°F for 12-15 minutes or until the dip is golden and bubbly. Garnish with additional green onion and serve with baguette slices or tortilla chips.
