It’s time. It’s time to put the slow-cooker in the basement and scrub up the grill. It’s time to break out the tongs and sing M-A-R-I-N-A-D-E in falsetto. People, it’s officially summer. People, it’s time to grill.
I should preface this post with the fact that: The grill is never a one man show.
There’s a lot more than you think that goes into a great grilled meal. There’s the grill > That’s key.
The griller > He’s the secret ingredient. And to any ingredient > there’s always a secret.
And the inspiration for my Balsamic and Honey Chicken Skewers recipe > it was delivered to my door.
Hatchery is like a personal shopper for your taste buds.
They’re purveyors of goodness. They seek out farmers and local artisans. They share ingredients and products each and every month, with a tasting box sent to your doorstep each and every month.
Each box of goodies comes in a sturdy, recyclable box with the products inside carefully wrapped in recyclable paper for shipping. I love the attention to detail in their branding, down to even the newsprint washi style tape with their name imprinted upon it.
I was contacted by Hatchery to ask if I’d share the deets on their monthly flavor boxes with you. I wasn’t familiar with them before they contacted me, but once I got a look at their bright red boxed packaging with stellar typography and design (my type geek innards of longing strikes again) plus the list of carefully curated artisanal products they represent from across the U.S., I knew this was a company I wanted to tell others about.
So, what it boils down to is samples of tastes, from savory to sweet, delivered to your door when you subscribe. Then, when you discover the products you love from your smartly designed Hatchery box, you can buy the full size versions directly from their website. Again, delivered straight to your door.
This month’s tasting box included seasoning salts, Arrabbitata gravy, a super tangy mustard, organic blueberry fruit spread and maple flakes. Maple flakes? Can’t wait to try that one.
One of the smart ways they pimp their samples is to include a Tasting Guide, where they deliver intel about the boxed samples, the artisans who created them plus unique recipe ideas using the products included. Yep, all in a really great designed package. I’m such a sucker for packaging.
This month’s Hatchery box included one of my favorite specialty brands, O Olive Oil. This sample was for their Fig Balsamic Vinegar. It’s balsamic with a big dose of figs, my favorite Meyer lemons, blood orange and Tahitian lime. Yep, it’s goooood.
And that’s when my mind started spinning.
With chicken ideas. With balsamic. With the grill. Done and done.
Welcome summer. Nice to see you again.
Balsamic and Honey Chicken Skewers
Ingredients
- 1 pound boneless skinless chicken breasts, about 2 breasts
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 clove garlic minced
- 3 tablespoons honey divided
- 1 teaspoon fresh rosemary minced, plus more for garnish
- kosher salt and freshly ground black pepper
Instructions
- Gather 3-5 wooden skewers and place in a shallow plate with water for 30 minutes.
- Trim the chicken breasts of any extra fat. Cut into 1 inch chunks and set aside.
- In a medium size mixing bowl, whisk the balsamic vinegar, extra virgin olive oil, garlic, 1 tablespoon honey and 1 teaspoon rosemary plus a generous pinch of kosher salt and freshly ground black pepper. Add the chunks of chicken breast and refrigerate for 1-2 hours.
- Preheat the grill to high. Thread the chunks of chicken onto the wooden skewers.
- Spray the grill with non-stick cooking spray or olive oil. Reduce the heat to medium-high. Cook the chicken for 3-5 minutes on each side, basting the chicken with the remaining honey. Continue turning until chicken is cooked though, about 10 minutes or until chicken is opaque.
- Let sit for 2-3 minutes and serve. Drizzle with more honey and fresh rosemary if you'd like.
