Meal Prep & Leftover Tips

Shrimp Scampi: Top Arugula Salad with leftover shrimp for a light lunch or as a side salad with Marry Me Chicken or Stuffed Peppers!

Marry Me Chicken: Store leftovers in the fridge for up to 3 days. Tip: add a splash of water to sauce when reheating if sauce is too thick. Serve leftovers over Lemon Rice.

Stuffed Peppers: You can prep stuffed peppers in advance by blanching and filling them, then refrigerating for up to 2 days. Stuffed bell peppers freeze and reheat well. Freeze stuffed peppers after cooking them for up to 3 months.

Citrus Shrimp and Avocado Salad: Prepare the the Pan-Seared Citrus Shrimp up to 3 days in advance. Gently warm the leftover shrimp, or serve the shrimp chilled with your salad.

Turkey Spinach Penne Pasta: This one-pot recipe is already perfect for a Friday night dinner after a busy week. To cut down the prep time even more, dice the onions and bell pepper ahead of time and store in the fridge up to 3 days in advance.

Garlic Bread: If you have the freezer space, freeze garlic bread ahead of time! It will keep frozen for about 3 months. Use leftover garlic bread to make Garlicky Homemade Croutons!
