Hello hello and say hey to Fri-YAY!
Last weekend’s escape to Las Vegas was just what this over-winterized body needed. Sunshine, double rainbows, birdies in the trees (and on the golf greens)), a concert that brought some favorite music to our ears, some yummy grub, plus good old-fashioned road-tripping with my man made the whole weekend pretty near perfect.
We came home with rain coming down and the front yard mountain of snow melted away. I LOVE the rain, but after that taste of spring, I’m ready for the clouds to float right on away. Yesterday was the first day of glorious sunshine to be seen in months. The lure of sitting in the sunshine as I ate my lunch gave me a shift in perspective and some much-needed vitamin D. I cobbled together a mash up of this springy salad with this salad classic where the sesame dressing is so so so good! It is truly amazing how a shot of sunshine can change the whole feel of the day. I had more pep in my step, felt more focused, and was ready to tackle everything the rest of the day and the weekend is sure to deliver. I hope your Friday and weekend treat you as well as I know mine will.
