Here we go again. We’re nearing the end of the season where we eat and drink because life is meant to celebrate and moving into the reality of soon we’ll be wearing swimsuits at the pool. Don’t get me wrong. I’m still craving the slow braise of comfort food dinners but healthier eats are definitely inching their way into my eyeline. A simple roast chicken alongside this robust and healthful Thai quinoa salad was on the dinner table this week and man, it tasted refreshingly good. Even better, there were leftovers for lunch.
