Hello and happy Friday!

With a passel of avocados ripening away, it was time for me to make my favorite creamy chicken suiza enchiladas with avocados mixed in the sauce. I’m a flour tortilla in my enchiladas type of gal, but if you like corn, use those instead.

Tax day is just a few weeks away. My dad did a great job teaching us to save for retirement, and it’s always been one of my number one priorities. It used to be that $1 million would be enough to retire on, but is that even close to true anymore? Depending on which U.S. city you live in, here’s how long that million bucks will last.
