Most gals yearn for chocolate. Put me in the “yes” category on that one. Romantic dinner for two? The occasion definitely calls for pasta. Combine these two ingredients for a romantic Valentine’s Day and wha-la! Chocolate Pasta with Gorgonzola Cream Sauce.

Chocolate pasta? Say what? Did you do a double take?
Okay, I may have lost it this time. Chocolate with cheese? Why not? It certainly works on cheese boards, so why not in one hot bowl for me and my lover?
I’ve been harboring this package of chocolate pasta for a while now all in anticipation of Valentine’s Day. The moment I laid eyes on it while roaming the eyes of Home Goods (I find so many unexpected finds there!) my synapses snapped.
Chocolate. Spunky cheese. Cream. A few really good ingredients to make a really great dish. My head was in forward motion. My recipe practically wrote itself as I was standing in the gourmet foods aisle.
But then this recipe almost didn’t see the light of day.
I nearly forgot all about it until I was scrounging around my noodles / rice / grains / soups / Smudge’s-collection-of-straws-of-every-size drawer and upon my rediscovery shouted BINGO like I was a senior citizen at a low-brow Las Vegas casino. And yes, I’ve already gotten my start on the pro-bingo circuit, and truth be told, it’s HARD! Those old Bettys move fast.
I really need to organize that drawer. It’s volcanic eruption-like ways is totally stressing me out.
The salty Gorgonzola melts into the creamy roux sauce to creates a velvety layer of lushness and a decadent dinner for two. Maybe two for dinner and two for lunch. Or four for dinner. Either way, this sauce drizzled on the pasta with a sprinkling of nuts puts you on your way to Cupidtown.
About the recipe:
The flavor of chocolate is actually pretty mild. So leave your notions of chocolate shake flavored cheesy noodles at the door. This is far more sophisticated than that. *wink.
I used this brand of chocolate pasta and I really liked it. It was sturdy and toothsome and held up well with the sauce. If you can’t find a store-bought brand of chocolate pasta (I admit, they aren’t easy to come by) try making your own, like this recipe for chocolate pasta dough, and serve it linguine or fettuccine style. Or if you’re feeling extra ambitious for your love, cut the pasta into rounds and stuff with 1 cup of ricotta mixed with 1 egg and make yourself some raviolis.
Can’t find gorgonzola? Try a mild blue cheese instead. Gorgonzola is the Italian version of the French Blues, so they are nearly interchangeable. I like this brand or check with your local cheesemonger for recommendations.
Don’t care for the flavors of Blue cheeses at all? Sub the blues with Parmesan for a neutral but creamy cheese flavor.
Toasted walnuts or hazelnuts can be used instead of pistachios. Just don’t leave them out, the added crunch makes a favorite addition to this recipe and balances out the creaminess.
If the sauce is too thick add a tablespoon of milk at a time until you reach the consistency you and your thumping heart desire. This can be a pretty rich sauce if it cooks too long so keeping it velvety is the key.
Chocolate Pasta with Gorgonzola Cream Sauce
PrintIngredients
- 8 ounces chocolate pasta
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 cup non-fat milk
- ½ cup cream
- 4 ounces gorgonzola
- ½ cup pistachios chopped
- Parmesan cheese for garnish
- Chocolate shavings for garnish
Instructions
- Cook pasta in UN-salted water according to package directions or until al denté. Drain.
- While pasta is cooking, melt the butter in a sauce pan over medium heat. Add the flour and whisk constantly until smooth, and cook for about 3-4 minutes or until mixture turns golden.
- Add milk and cream and whisk until sauce begins to thicken, about 4 minutes. Add the gorgonzola and stir to melt. If sauce is too thick, add more milk, 1 tablespoon at a time until you get the right thickness.
- Place pasta in bowls and drizzle with gorgonzola cream sauce, top with a handful of pistachios and sprinkle with parmesan and chocolate shavings. Serve immediately.
Pasta at home is an easy way to melt your favorite valentine’s heart. Cooking a homemade dinner shows you really do care. The fact that you thought about it, planned it and that you invested the time you could have spent getting a pedicure or shoe shopping on THEM. Boy, they’re lucky ducks.
