Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: creamy sausage tortellini, easy taco salad, stuffed pepper soup, pineapple chicken, sheet pan BBQ chicken pizza, with mix and match sides, and the best pumpkin bread!
To simplify your grocery shopping list:
- Use sweet or hot Italian sausage, depending on your love of spicy heat.
- Swap the cheese tortellini for spinach tortellini for some extra veggies!
- Use your favorite lettuce like romaine, spring mix, butter lettuce, or even some massaged kale for the taco salad.
- Bell peppers used in almost all the dinners this week.
- Purchase canned pineapple that’s packed in its own juices. Avoid the kind packed in syrup, which will make the sauce more sweet than sour.
- You can use rotisserie chicken and store-bought pizza dough to save time making the BBQ chicken pizza.
- Use frozen or fresh broccoli for the casserole!
- Choose any salami you prefer for the antipasto salad, Genoa, cotto, Finocchiona, hard salami.

Meal Prep & Leftover Tips

Creamy Sausage Tortellini: You can use any type of tortellini you like, but I prefer the fresh kind sold in the refrigerated section of the grocery store.

Taco Salad: Use ground chicken or turkey instead of beef for a lighter option. Or use grilled or rotisserie chicken.

Stuffed Pepper Soup: Cook the rice separately for a soupier soup. I’ve made this recipe before by adding uncooked white rice directly to the pot and it gives it a soggier texture and ultimately makes more of a stew than a soup.

Pineapple Chicken: Sometimes my grocery store sells pre-sliced cutlets, but more often than not I just buy breasts and cut them in half lengthwise to make my own. Chicken cutlets cook faster and more evenly than breasts.

Sheet Pan BBQ Chicken Pizza: I’m on the meal planning rotation of cooking a chicken every week and this juicy crock pot whole chicken couldn’t be easier. If you’re not up for cooking your own, a store-bought rotisserie will do.

Pumpkin Bread: Check the ingredients label to make sure you’re buying 100% pure pumpkin puree and not canned pumpkin pie filling. You’ll need just 1 cup, NOT the entire can.

Broccoli Casserole with Crispy Onions: I typically use fresh broccoli, but if you’re looking for the convenience of frozen, be sure to choose broccoli florets.

Antipasto Salad: I don’t add salt because the smoked Italian meats already have plenty, but feel free to add salt to taste if you like.
