Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: Thai-inspired peanut noodles with chicken, taco salad, chicken with asparagus and mushrooms served over mashed potatoes, homemade hamburger helper and garlic bread, grilled honey lime chicken with fried rice and grilled veggies, and a seasonal blackberry peach cobbler for dessert.
To simplify your grocery shopping list:
- I used linguine, which I always have stocked in my pantry, but fettuccine, thick rice noodles, or another long pasta shape may also be used.
- If you’re still avoiding iceberg, swap for romaine, spring mix, butter lettuce, or even some massaged kale for the taco salad.
- Sometimes you can find pre-made chicken cutlets at the grocery store, but more often than not I have to purchase chicken breasts and prep my own.
- Thick asparagus spears tend to be fibrous and tough to chew, so look for thinners ones if you can.
- Bell peppers are used in the noodles and grilled veggies, and toss some in the hamburger helper too.
- Using boneless chicken thighs reduces the cook time. Feel free to use bone-in, but adjust cooking time accordingly.
- You can substitute any of the fruit in the cobbler you’d care to change up. Readers have said they paired the peaches with blueberries, cherries, raspberries, and other stone fruits.

Meal Prep & Leftover Tips

Peanut Noodles With Chicken: You can meal prep chicken for the Thai noodles, or use a rotisserie chicken. Try swapping in poached shrimp, thinly sliced Asian pork tenderloin, crispy tofu, or baked Thai meatballs.

Taco Salad: Use ground chicken or turkey instead of beef for a lighter option. Or use grilled or rotisserie chicken.

Chicken with Asparagus and Mushrooms: Not a fan of asparagus? Swap out and use green beans instead. If you want to serve this with a carb, serve over rice, mashed potatoes, or some buttered pasta noodles.

Homemade Hamburger Helper: Try swapping the ground beef for ground turkey, or ground pork. Adding sliced cremini mushrooms, bell pepper, frozen peas, or corn would be great additions. Spinach would also be a great addition.

Grilled Honey Lime Chicken: Repurpose the leftovers in salads, noodle bowls, veggie wraps, and grain bowls for lunch or dinners over the weekend.

Blackberry Peach Cobbler: For the freshest taste, use in season, fresh peaches and blackberries in this cobbler. If using frozen or canned peaches, thaw and drain well so the cobbler doesn’t get runny.

Mashed Potatoes: Mash with a hand mixer, like Grandma used to. I’ve tried every way to mash taters and I always go back to the way my mom and my grandma always made them using a good ol’ hand mixer!

The BEST Fried Rice: Chilled leftover rice is the secret to making the absolutely best fried rice ever, so make rice the day before and refrigerate.
