Happy Halloween! This week’s meal plan includes: Hamburger vegetable soup, shredded chicken tacos with Spanish rice, sloppy joes with potato salad, turkey spinach penne pasta, salsa verde chicken enchiladas, and pumpkin roll cake!

- This week we are including a lot of easy, one-pan, make-ahead, complete meals since it is a busy Halloween week!
- Easy side options available, but all of the recipes can be a complete meal on their own! For an even easier side, air fry up some store-bought frozen fries with your sloppy joes, and grab your favorite bagged salad kits to to pair with the turkey pasta, soup, or tacos.
- Lots of pantry staples in this week’s plan. And use your favorite veggies—fresh, frozen, or canned—in the hamburger soup, penne pasta, and enchiladas.

Meal Prep & Leftover Tips

Hamburger Vegetable Soup: Ground beef cooks in a fraction of the time that stew meat requires to become fork tender. You’ll still get the rich beefy flavor you love in a traditional vegetable beef soup, in a fraction of the time.

Shredded Chicken Tacos: Make a big batch of this chicken and freeze, because it’s great for piling onto everything from tacos to burrito bowls to nachos to enchiladas.

Homemade Sloppy Joes: My favorite way to serve is with a hearty serving of pickles and potato chips—no, not on the side, but right on the sandwich. That’s what makes this sandwich this kids’ dream-dinner all over again.

Turkey Spinach Penne Pasta: Cook this in a deep, 3-4 quart sauté pan or a Dutch oven so the pasta has enough room to expand. 85/15 lean ground turkey is the best choice for this pasta, the leaner the meat, the more prone it will be to drying out. Since the pasta cooks right in the sauce, you’ll want to use a good quality chicken broth.

Salsa Verde Chicken Enchilada: For an easy dinner on Halloween night, these enchiladas are great to make in advance. You can make these ahead of time, cover tightly with foil or cling wrap, and refrigerate for up to a day in advance, then bake as directed. They also freeze well.

Pumpkin Roll: To freeze: assemble and chill your cake, then slice it, wrap each slice in plastic wrap, then freeze. When you’re ready to eat, just place them in your fridge to thaw for about 2-3 hours.

Spanish Rice: Use premade salsa instead of fresh tomatoes, onion, and garlic. Blend 1 ½ cups of your favorite salsa or pico de gallo instead of using the fresh ingredients. Or replace fresh tomato with canned roasted diced tomatoes.
