Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: white bean chicken chili, chipotle chicken taquitos with creamy avocado salsa verde, blue cheese, chicken, and caramelized onion pasta, Mediterranean chicken, French onion meatball orzo, shakshuka, and mix and match sides.
To simplify your grocery shopping list:
- For the chicken chili, cannellini beans are slightly larger, with a nuttier flavor profile, while great northern beans have a more delicate flavor.
- Use whatever shredded cheese you have on hand for the taquitos. Cheddar, Monterrey Jack cheese, or a Mexican cheese blend would all work perfectly.
- You can use rotisserie chicken for the taquitos and/or chicken chili to save some time and money.
- Try a different pasta — preferably a shorter one, such as rigatoni, fusilli, or bowties.
- Instead of blue cheese, try goat cheese or grated Parmesan for the pasta.
- Buy the artichoke hearts that are packed in water, not oil for the Mediterranean chicken.
- Use another brine-cured Mediterranean olive, such as Niçoise or Gaeta for the Mediterranean chicken.
- Beans used in several recipes this week. Beans are a great pantry-staple that I always have on hand becasue they are cheap and a great source of fiber and protein.

Meal Prep & Leftover Tips

White Bean Chicken Chili: Leftover chili can be stored in the fridge for up to 5 days. It reheats well in the microwave, making it great for quick lunches or dinners.

Chipotle Chicken Taquitos: To make then even easier to put together, use pre-cooked chicken breast or rotisserie chicken. Serve them alongside my favorite Mexican rice or beans, and add this Chopped Mexican Kale Salad or a crunchy Caesar Salad for a complete meal.

Pasta with Chicken, Caramelized Onion, and Blue Cheese: Be sure to cook the pasta just shy of being done before you add it to the sauce since it will cook further (you want it to cook more in the sauce so it absorbs more of the sauce’s awesome flavor).

French Onion Meatball Orzo: You’ll want to make the meatballs first since caramelizing the onions will require a little bit of babysitting. The meatballs are super quick and easy to throw together and they bake in the oven. Or use your favorite frozen meatballs to save time.

Shakshuka: Add some sautéed kale, spinach, or marinated artichokes after your onions and peppers cook, and top with avocado, microgreens, or green onions. Instead of harissa paste, you could use red pepper flakes or chili powder.

Creamy Avocado Salsa Verde: While technically you could just dump all of the ingredients into the blender and go, my clunky old blender needed a bit of a help so I gave everything a super rough chop. If you have a swanky high-powered blender, you might be able to skip this step!

Garlic Bread: Use Ciabatta rolls in lieu of Italian bread because the butter will melt into all those lovely nooks and crannies!

Roasted Asparagus: Choose bright green stalks that are firm and fresh. While asparagus is more readily available in spring, you can typically find good quality year-round.
