This week our Utah mountains were absolutely transformed into a showcase of reds, oranges, yellows, and greens, showing off the most spectacular display of fall leaves some thought only to be found in Vermont and New England. Hardly! The parade of colors is astonishing! And I’m soaking up every view, and even taking my eyes to the dark sky, where two nights ago I spied two falling stars within 10 minutes of one another. It truly makes you believe in magic. But wait, there’s more, because this month, there’s some serious astronomical activity! Don’t look at it directly, but the Ring of Fire eclipse is next Saturday, on the morning of Oct. 14 (here’s how to watch it). Plus, the Oronid meteor shower with 25-30 shining bright dives per hour is in full effect Oct. 21-22, and a partial lunar eclipse is happening, too.
Oh my stars, look to the sky! But before you do, be like me and my husband and cozy up to one of the recipes that always makes an early fall appearance: This French onion soup. My husband said this batch was one of our best blends yet. I made smaller bread croutons to cushion the melty gruyere, so it was easier to scoop through with a spoon. And remember, keep those onion slices thick so they don’t disappear into the sumptuous broth. This baby is a slurping keeper!
