Hello Friday, let’s make it a happy and healthy one.
I’ve been touting the Mediterranean diet for years. But then if you’re a reader here, you already know that. My fan girling of the Med way of eating only increased a few years ago when I discovered Dan Buettner, a National Geographic Explorer and the founder of Blue Zones. If you aren’t yet familiar, Buettner’s Blue Zones research discovered the five places in the world where people live the longest. So what do these communities have in common to create the highest concentration of octogenarians in the world? The research is fascinating! So last week, when Netflix released the Live to 100: Secrets of the Blue Zones documentary, I was tuned in and glued on. And finally, after years of talking it up to my husband, he is finally on board after watching it. One thing we’re implementing asap is eating 1 cup of beans every day. Yep, it’s a thing. And it’s easy to do with recipes like this Mediterranean chickpea salad. So good. There’s plenty more, but that’s where we’re starting. I hope you will too.
