Over the past few weeks, I’ve been cooking a whole lot from the blog. That’s not always the case, because I’m often working on new ideas and recipes, or eating cereal or cantaloupe and cottage cheese for dinner because I.just.can’t. But this week, I pulled out several faves including this grilled zucchini that I make pretty much every week once my zukes start generating their plethora of produce. I pivoted on the goat cheese and used feta instead and in lieu of thyme I gave it a generous shower of dill. Mint or tarragon would have been delish too. That’s the secret to being a successful cook: Be nimble and you’ll have more fun.
