I swear, there is nothing better than a summertime BLT with thick-cut bacon, the juiciest still-warm-from-the-garden tomatoes, and crunchy iceberg lettuce. Okay, a killer caprese with burrata is right up there too. And corn on the cob. And all the summer eats. Why is eating just so dang good right now? Makes no matter to me, I’m here for it all. Thank you for linking the Eater article on vegetable-forward cookbooks. Between that, your comment about loving edamame, and the link to the tortellini salad with asparagus, it made me wonder if you’ve tried Hetty McKinnon’s recipe for Gnocchi with Asparagus, Edamame, and Parmesan from her book “Family”. It’s a wonderful recipe and super simple for a weeknight supper.
