Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: chicken schnitzel with my grandma’s German potato salad, green chile egg casserole, Salisbury steaks & mushroom gravy over mashed potatoes with a side of green beans, apple pecan chicken salad, pasta alla Norma and killer garlic knows, and frosted coconut lime cookies for dessert!
To simplify your grocery shopping list:
- You can use pork for the schnitzel if you prefer. If you’re sticking with chicken, I slice my chicken breasts lengthwise to make thinner cutlets.
- I like using red potatoes like my grandma did for the potato salad, but Yukon gold would work too.
- I always use white vinegar in the potato salad for tang and acidity, but apple cider vinegar is also yummy.
- Depending on how spicy you’d like your casserole, you can opt for hot or mild chiles.
- Add cooked and crumbled breakfast sausage or bacon to the casserole to increase the protein.
- 85% lean ground beef is my preference for the Salisbury steaks. Avoid using anything too lean or else your steaks will be dry.
- I used boneless skinless chicken breasts for the salad, but any cut of chicken may be used.
- I like the globe variety of eggplant best for the pasta, which is what you typically will see at most grocery stores.
- If you can’t find ricotta salata, you can sub with pecorino romano, cotija, or even feta cheese.

Meal Prep & Leftover Tips

Chicken Schnitzel: Rest the breaded chicken before frying. This trick sets the breading to ensure the crisp crust won’t pull away or separate from the chicken when cut with a knife.

Green Chile Egg Casserole: The casserole will last up to 5 days in the fridge and can be reheated in a 350ºF oven. You can prepare it a day in advance if serving to guests.

Salisbury Steaks & Mushroom Gravy: Embrace the retro shortcuts. The mushroom gravy is made with both ketchup and Worcestershire sauce for a sweet and savory kick of flavor that tastes just like the Salisbury steaks that Mom used to make.

Creamy Mashed Potatoes: Mash with a hand mixer, like Grandma used to. I’ve tried every way to mash taters and I always go back to the way my mom and my grandma always made them using a good ol’ hand mixer!

Green Beans Almondine: To cut down on some prep work, you can trim and rinse the green beans ahead of time and let them chill out in your fridge until you’re ready to use them.

Apple Pecan Chicken Salad: This salad is also great with classic Dijon vinaigrette, balsamic vinaigrette, or Italian dressing.

Pasta alla Norma: I love my homemade marinara recipe for this, but you can always use a high-quality jarred sauce.

Frosted Coconut Lime Cookies: Press the cookies with even pressure to create a well-rounded circle with shaggy edges. The rustic look proves these homemade babies are made with heart.
