This week’s meal plan includes: BBQ chicken, fajita packets, pork chops, baked hamburgers, zucchini pasta, peach cobbler, and mix and match sides
To simplify your grocery shopping list:
- Bell peppers are used for roasted veggies and fajitas.
- Onions used in BLT pasta salad, fajitas, grilled vegetables, and burgers.
- Seasonal zucchini used for the pasta and roasted veggies.
- Use bacon for the BLT pasta salad and on the burgers.
- Avocado is used in the BLT pasta salad, and can also be used on the burgers and fajitas.
- Chicken breasts used for the BBQ chicken and fajita foil packets.

Meal Prep & Leftover Tips

BBQ Chicken: Use leftover chicken on salad or pizza. Serve this chicken with potato salad, grilled veggies, or BLT pasta salad.

Chicken Fajita Foil Packets: These chicken foil dinners can be made 2 days ahead and refrigerated until ready for cooking.

Grilled Pork Chops: Leftover pork is amazing in stir fry or pork fried rice! Serve these pork chops with potato salad, grilled veggies, or BLT pasta salad.

Baked Hamburgers: The hamburgers are best straight from the oven, but leftovers will last up to 2 days. Top Crunchy Green Salad with Dilly Chickpeas with leftover patties for a burger salad.

Stanley Tucci’s Zucchini Pasta: Once the pasta is cooked and tossed with the sauce, it’s best served. However, you can fry the zucchini and let it hang out in the fridge overnight before assembling the rest of the dish.
