This week are celebrating the beginning of summer with the fresh seasonal flavors of balsamic strawberry chicken salad, crispy baked chicken tacos with pinto beans and chunky citrus guac, grilled pineapple shrimp with a Vietnamese noodle salad, a pulled pork sandwich with caprese strawberry pasta salad, sweet and sour pineapple chicken with fried rice, and a mixed summer berry pie!
To simplify your grocery shopping list:
- We are leaning into summer berries this week and using strawberries in the avocado salad, the pasta salad, and the berry pie.
- Rotisserie chicken and store-bought taco sauce are used in the tacos!
- Pineapple used in the grilled pineapple shrimp and pineapple chicken. You can use pre-cut pineapple or canned pineapple that’s packed in its own juices.
- Buy large shrimp for the kebabs. They’re more difficult to overcook and won’t become rubbery on the grill.
- Don’t skip out on the apple juice for the pulled pork. Braising pork in apple juice makes it significantly more tender more flavorful than just using broth or water, just be sure to use unsweetened apple juice.
- Avocado used in the salad and guac—to pick out ripe avocados, feel for just a bit of softness and give, then take a look at the brown nub of the stem. If the stem comes off easily and shows green underneath, the avocado is ripe.
- I prefer the rice vermicelli noodles for the noodle salad, but you can also use glass or cellophane noodles that are made from mung bean, sweet potato, or potato starch.
- You can buy pre-made crust for the pie if you don’t want to make your own.

Meal Prep & Leftover Tips

Balsamic Strawberry Chicken Salad: I like to cook a few chicken breasts on Sunday or Monday to eat during the week in salads like this. If you’re ready to grill, this technique is always a grilled chicken success.

Crispy Baked Chicken Tacos: Warm the tortillas so they don’t crack or break. Corn tortillas have to be wrapped in a damp tea towel and microwaved for 30 seconds to prevent them from crumbling.

Grilled Pineapple Shrimp Kabobs: If you don’t have an outdoor grill, you can use an indoor grill pan or griddle, instead.

Pulled Pork Sandwich: To prevent the pork from stewing in the cooking liquid, I always raise it off the bottom of the roasting pan using a roasting rack. This helps air circulate all around the meat so it cooks more evenly and becomes super tender.

Pineapple Chicken: Sometimes my grocery store sells pre-sliced cutlets, but more often than not I just buy breasts and cut them in half lengthwise to make my own. Chicken cutlets cook faster and more evenly than breasts.

The Berry Best Four Berry Pie: Fruit pies are best within 24 hours of making them, but they can be kept on your counter for a few days before going bad.

Pinto Beans: Cooked pinto beans will last up to 2 weeks in the fridge. Store them in their cooking liquid to keep them moist and creamy.

Strawberry Balsamic Pasta Salad: I use golden balsamic vinegar in the dressing because it’s slightly sweeter than regular balsamic and has a less caramelized flavor. Rice wine vinegar can be substituted instead.

Fried Rice: Chilled leftover rice is the secret to making the absolutely best fried rice ever, so make rice the day before and refrigerate.
