Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: cashew chicken loaded with lots of fresh veggies, flaky fish taco bowls, hearty traditional beef stew, creamy salmon asparagus pasta, and fall-off-the-bone slow cooker chicken cacciatore. And because you’ve eaten all your veggies, I think you deserve a nice slice of homemade German chocolate cake for Valentine’s Day!
To simplify your grocery shopping list:
- Use chicken thighs or chicken breasts for the cashew chicken. Add any favorite veggies like broccoli, green bell pepper, water chestnuts, snow peas, or snap peas.
- Swap the cilantro lime rice for brown rice, or quinoa, or skip the rice entirely if you’d like and replace it with cauliflower rice or salad greens.
- Beef stew works best with hearty vegetables that hold their shape—my favorites are carrots, white potatoes, and frozen peas. You can also add bell peppers, zucchini/squash, mushrooms, and tomatoes.
- For the pasta, I recommend buying a block of Parmesan cheese and grating it yourself. Avoid the stuff in a shaker can, it doesn’t compare to freshly grated Parm.
- Use Dutch processed cocoa for the cake—it’s much less bitter than regular cocoa powder.

Meal Prep & Leftover Tips

Cashew Chicken: If you don’t have Shaoxing wine, keep the sweet notes by using sherry wine. Add any favorite veggies like broccoli, green bell pepper, water chestnuts, snow peas, or snap peas.

Fish Taco Bowl: I like using cod or halibut for my fish tacos because ideally, you want flaky, mild white fish. I don’t recommend using tilapia or salmon — tilapia isn’t great quality, and salmon is a bit too overpowering.

Traditional Beef Stew: As a replacement for red wine, steep 1 black tea bag in 4 ounces boiling water until it cools. Mix in 1 teaspoon distilled white vinegar, then replace equal amounts for the red wine. The tannins in tea replicate those in wine.

Creamy Salmon Asparagus Pasta: Use any cooked salmon you like! This is a great pasta recipe to make with leftover salmon since it reduces the prep time considerably. You could use grilled salmon, baked salmon, poached salmon — whatever you’ve got!

Slow Cooker Chicken Cacciatore: Serve it over pasta, polenta or spaghetti sauce or spiralized zucchini noodles topped with a sprinkling of grated Parmesan cheese.

German Chocolate Cake: Toast the pecans for even more flavor. You can add the chopped pecans directly to the frosting, but I like to take a few extra minutes to toast them to enhance their warm and nutty flavor.

Caesar Salad: You can omit the anchovies and sub in 1 teaspoon of Worcestershire sauce and 1 teaspoon of lemon juice. If you’re vegan, omit the Worcestershire and try adding some minced capers.

Garlic Bread: The garlic butter lasts in the fridge for at least 1 month, so make a batch and keep it refrigerated for when the craving hits. Bring the butter to room temperature or give it a quick blast in the microwave to soften before spreading.
