This week’s meal plan includes: Salisbury steak smothered in mushroom gravy, sesame soba noodles, cozy white bean stew, creamy chive chicken, Mexican shrimp orzo with zucchini, Irish mashed potatoes, buttered noodles, and brown sugar glazed carrots.
And celebrate New Year’s Eve in style with my take on Oprah’s pomegranate martini!
To simplify your grocery shopping list:
- Three quarters of the ingredients for the Mexican shrimp orzo you can easily keep at the ready because they are either dried/canned/frozen or are slow-spoilers that are simply always in rotation.
- The Irish potatoes are budget-friendly—using easy-to-find ingredients, this delivering maximum flavor with minimal cost.
- I particularly love carrots because they’re inexpensive and always available. Carrots are used in the white bean soup and serve glazed carrots with the chive chicken and Salisbury steaks.

Meal Prep & Leftover Tips

Salisbury Steaks & Mushroom Gravy: Refrigerate leftovers in an airtight container for up to 5 days. Reheat gently in a skillet over medium heat or in the microwave at 30-second intervals.

Sesame Soba Noodles: These noodles are amazing on their own or as a base for noodle bowls with some baked chicken breast, teriyaki chicken, crispy chicken katsu, and veggies like smashed cucumber salad and Asian broccolini.

Creamy Chive Chicken: Make sure to scoop every last bit of the creamy chive sauce over the chicken to keep it moist. Reheat the chicken in the microwave for 30-second intervals or in a skillet set over medium-low heat.

White Bean Stew: There’s three cans of white beans in this stew, and each needs to be drained and rinsed well to remove the slightly metallic flavor of the canning liquid.

Mexican Shrimp with Orzo & Zucchini: Use frozen shrimp and save even more time by using ones that are already shelled and deveined. To thaw the shrimp, simply place in a bowl and run warm-ish, room temperature water over them for a few minutes.

Pomegranate Martini: Try these variations—Instead of pomegranate juice, use cranberry juice or tart cherry juice, try lime instead of lemon, and swap the vodka for gin!

Irish Mashed Potatoes: These pair with everything! Were serving them with our Salisbury steaks and creamy chive chicken, but they’re crazy good with everything from corned beef to roast chicken and as the mashed potato topping in Shepherd’s pie.

Glazed Carrots: You can substitute the brown sugar with any of these sweeteners: honey, dark brown sugar, agave, molasses, or maple syrup.
