Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: grilled salmon, Greek chicken salad, healthier broccoli cheese potato soup, BBQ chicken breasts, my mom’s pot roast, copycat Starbucks lemon loaf, and mix and match sides.
To simplify your grocery shopping list:
- You can use Yukon gold potatoes for the broccoli cheese potato soup and pommes Anna.
- The bean salad is a good, old fashioned, pantry staple recipe. Feel free to switch up the types of beans with what you have on hand or prefer.
- Choose a nice filet of salmon with the skin ON (king, chinook, coho, or sockeye).
- Use any vegetables you like for the Greek salad a pot roast.
- Get more bang for you buck and buy some chicken breasts in bulk for the BBQ chicken and Greek salad. Prep some extra chicken in the Greek marinade and freeze for future use.

Meal Prep & Leftover Tips

Greek Salad with Chicken: Prep everything ahead of time so that you just have to throw it all together when dinner time rolls around. Everything keeps really well and leftovers are great for lunches too!

Broccoli Cheddar Potato Soup: The trick to adding the cheese so the soup doesn’t break and turn into a chunky mess is 1) first, toss your freshly shredded cheese in a bit of flour, 2) add it to the soup in small batches, 3) stir each batch until completely melted before adding another.

BBQ Chicken: This BBQ chicken will keep stored in a Tupperware container in the refrigerator for about 4 days. You can throw any leftover chicken into a southwest chicken salad or BBQ chicken chopped salad, or use to make sandwiches and wraps.

Mom’s Pot Roast: Use a heavy-bottomed pot with a tight-fitting lid or a Dutch oven to take this recipe from the stove to the oven. The oven’s heat does all the work.

Lemon Loaf: Don’t skip the zest massage into the granulated sugar – it’s where the magic happens when the lemon’s essential oils perfume the sugar

Pommes Anna: Yukon Golds are the best potato to use. They have a high starch content and hold their shape when baked, yet they remain creamy in the middle while getting nice and crispy around the edges of the pan.

Classic Waldorf Salad: The secret ingredient to the dressing is whipped cream. However, you can substitute the whipped cream with plain Greek yogurt or even sour cream.

Classic Three Bean Salad: Always drain the beans in a strainer, then rinse them well in cool water before adding them to the mixing bowl to remove any lingering metallic flavor from the can.
