Even though the output of my tomato plants was absolutely dismal this year, it hasn’t stopped my craving for the sweet little orbs. That’s led me to buying baskets after basket from the farmers’ market. So while I LOVE slicing them up fresh in a good old caprese pasta salad, their real jammy sweetness shines even brighter when I roast them in the oven. That’s when they’re the stars of my favorite roasted tomato sauce, this burrata salad, and these whipped ricotta crostini perfect for lunch or an easy dinner. Get ’em while you can!
