‘Tis the season for balancing my cookie consumption with something healthy to eat. Yesterday’s busy-day lunch salad was made super easy with a quick trip to Costco earlier in the week. And yes, I DO love the ‘Co hot dog more than most anything, but this time around, lunch was more about planning ahead and having a fridge stocked with a few items I could toss together. I mean, you really can’t go wrong with Costco’s $4.99 rotisserie chicken that I stripped bare and stashed in the fridge. I had also picked up a kale salad kit and tossed it with pomegranate seeds, canned chickpeas, and this nutty salad topping I’m eating on everything — so good on my morning yogurt. In addition to having shredded chicken at my fingertips for this salad and more, I made a batch of creamy chicken salad and a quick chicken broth from the carcass with a spoonful of chicken bouillon base. High fives to Heidi for making lunch easy without hitting a drive-thru!

Every year on Christmas night, we do an under $25 white elephant gift exchange with my husband’s side of the family. Here’s a few ideas I should have thought of sooner:
