Happy Friday, friends!

Can you feel it? It’s here. Spring fever is officially here.
I’m relishing it by soaking up some Vitamin D while working outside for a few hours a day and taking the puppers on longer walks minus my fur hooded down coat (I just saw that it’s on sale here!). But as a native Utahn, I’m no fool. I’m just waiting for the snow to sneak its way back into the neighborhood with the usual surprise spring storms. But knowing what I know, it won’t stay for long.
This week I dug in and got work DONE! Snaps to that. It feels good to focus and I can’t wait to share some new ideas and projects I have coming your way.
I also put my photo shootin’ hat on and took snaps of the purdy eats you see above from Solitude Mountain Resort, one of our local ski resorts that sits just 20 miles from downtown Salt Lake City. I’m headed up there again today to do some skiing and work on adding to that Vitamin D.
It’s just one answer to cure (or spread?) my spring fever.

I’m trying to distract you from my man hands with gorgeously sliced fruit, only because I want you to see my nails. A few Friday Faves ago I told you about this at home gel nail polish, and that I would let you know how well it worked. Well, after a whole week of washing dishes, cooking, photo shoots and general crap I’m always doing, it’s held up AMAZINGLY well, especially since I gave myself the manicure almost in the dark and in about 15 minutes flat. It’s stayed on better than my far more expensive nail polish at home or from the salon. I’ll totally keep using it. I only wish it came in more colors (like a concrete grey!). I’m wearing V-Amplified 489.
I recently had my wedding ring reset by my favorite jeweler. Oh man, I am dazzled by the loveliness every time I go in there.

Pining and Pinning for Easy Lunches
Lately I’ve been focusing a lot on dinner. But since I’ve been doing better at meal planning and cooking big on the weekend to eat through the week (like this week’s sheet-pan salmon), my focus was been wandering to lunch and taking advantage of all of those leftovers.
Here are a few vegetable-centric recipes that caught my eye this week and made it to my pin board, along with this list of 40 delicious and healthy lunch ideas to pack to work. Roast your choice of veggies and you have a head start on a whole week of lunches!
Curried Cauliflower Wrap
Since these don’t need to be refrigerated, they’re perfect to take to work or pack for school lunch.
Broccoli Melts
This recipe uses two kinds of cheese for the cheese bomb of a healthy (mostly) lunch.
Roasted Veggie Quesadilla
Assemble the fixings and cheese before heading out the door then warm in the toaster oven or microwave for a hot lunch.
