Potlucks are one of my favorite types of parties, where everyone contributes and takes a bit of the load off the host. Last weekend we made the most of the final days of summer weather with a potluck pool party at my MILs. She made her famous ground beef tacos (they taste just like Taco Bell’s) with refried beans and an egg green chile bake that I’m vying for the recipe. One SIL brought her garden-fresh salsa and the other her chunky guacamole. Per usual, I was craving something green so I made this easy fall-flavored Mexican chopped salad with buttery roasted butternut squash and dried cranberries.
