Hello again my friendlies, and welcome to Friday Faves.
Whenever I see a fridge makeover on Instagram, I wonder if those organized eaters flavor their food because of the absence of the maze of condiments that somehow, I cannot keep from collecting. This weekend I’ll be in spring cleaning mode. That includes clearing out old condiments in the fridge, parsing out expired items in the pantry, and ditching crusted-over-no-longer-freezer-friendly frozen foods. I mean, how many jars of my husband’s Trader Joe’s Hatch chile salsa can one pantry shelf hold? Apparently, seven. So before they expire, I put a jar to work and made my easy chicken enchiladas. In this version, I used green chile salsa and sour cream as a sub for the whipping cream and chicken broth. Because that’s the best part of cooking: Take a recipe you know then tweak it with what you have. One jar of salsa off the shelf, now six more to go.
