Hello Friday, how YOU doin’?
This week I received an email from reader Julia about my roasted tomatoes recipes. She was asking for advice on using the big, juicy tomatoes sold now at just about every local farmers’ market. Ironically, just a few days before I’d taken a frozen batch of my roasted tomato sauce from the fridge to make room for this year’s harvest. There’s so much you can make with these babies. I turned it into my tomato basil soup and subbed in grilled cheese croutons instead of orzo pasta to go on top. So easy, and frigging divine I tell you.
So, I’ll give you the same advice I gave her. If the tomatoes are really large, yes, you can cut them in half, or even quarter them before roasting. If they’re seedy, ditch the seeds so whatever you do with the tomatoes doesn’t leave you plucking seeds stuck between your teeth. Cooking time will vary depending on how big the tomatoes are, but like any good cook, keep an eye on them and go with your gut.
This week we delivered our baby girl to university. I’m so stoked for her and all of the adventures she’s about to have. But even more, I can’t wait for her to come home for a visit, where I can treat her like my 8-year-old baby as she dips her grilled cheese in soup again.
