Hello and happy Friday!
It’s spring! And by the looks of my drive home last night from my parents, you’d never know it here in Utah. The snow won’t stop. This record-breaking winter is fantastic news for our water tables and drought, but man, I’m ready to see my tulips bloom.
It’s been a busy week, making it even more important to prioritize my own health and eating right. Quick lunches and easy dinners have been the norm, with simple caprese toasts doing the trick to keep me satisfied on the healthier side.
I can’t wait to make these sandwiches with fresh tomatoes and basil from my garden. If the snow ever melts and goes away.
