Happy Friday friends!
We celebrated the Lunar New Year with friends and a homemade Korean feast accompanied by a bunch of store-bought banchan (little veggie bites.) I used this recipe to marinate the thin beef ribs before they hit the grill and made my favorite ramen noodle salad. Man, I love any reason to celebrate with food.
Napping is a rarity for me, something I simply don’t think of doing. I didn’t think I was tired, but when snuggled up under my favorite blanket (thanks Mom!) then told myself I’d close my eyes for just a few minutes, I woke up 1 ½ hours later. Power to the power nap and why it’s good for you.
