Today, spring has totally sprung!
In This Post
Unless you live on the East coast. And then, I apologize.
Daffodils, the cheers and jeers of college basketball fans, kite flying and finally—ice creams in the park!
What a difference a day makes.
Track all the way back to last Friday (this week was welcomingly slow and surprisingly didn’t fly by) when I was shusshing Suzy Chaffe-style down the slopes at Solitude Ski Resort with a few other media peeps and my friends Kelley, Paula and Valerie.
Then come Saturday, polar-opposite position in just a 20 minute drive and 4,000 vertical feet and I was soaking in the 70+ degree weather in my tank top, cleaning out the backyard’s remnants of winter while Smudge danced about, jonesing to get the flowers that we have yet to buy into the ground NOW.
On to Sunday, we were back on the mountain at Deer Valley for what is possibly our last day of skiing for the year (insert sad emoji here), then back to the homestead to pick up the poochers for a hike along our red rocked hills, all the while wondering why we didn’t go golfing instead.
Utah is crazy that way. And I love it.
Oh but that day at Solitude. It was the epitome of spring skiing.
Hard and fast snow in the morning that transitioned to mashed potatoes in the afternoon. Everything relates somehow to food in my world.
After a totally blue bird day of bumps and runs, we converged on Solitude’s Honeycomb Grill. This is the stone deck where you want to while away the afternoon with a glass of wine, a few apps and watch the world ski right on by.
I snacked on fritto misto, imbibed a signature jalapeño blackberry margarita, shared a wedge salad with Kelley (with a side of roasted beets for me) and savored an arugula and prosciutto topped D Pizza.
That pizza recipe, my friends, will be coming to thrill you on the blog soon.
Until then, let’s dig into some Friday Faves!
