Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: 15 bean and ham soup with the best dinner rolls, chicken fajitas with roasted garlic guacamole, Mediterranean salmon bowls, chicken and dumplings with a Brussels sprout salad, eggplant parm with Caesar salad, and pumpkin tiramisu.
To simplify your grocery shopping list:
- As far as I know, HamBeens® 15 Bean Soup® mix is the only one sold of its kind, so there’s no good substitute I can provide for it.
- You can use chicken breasts, tenders, or even chicken thighs for the fajitas. Grab whatever you prefer or what’s on sale.
- If you can’t find already-ripe avocados, place them in a paper sack with a few bananas to speed up the ripening process.
- I prefer Atlantic salmon, but you could use a different variety for the bowls.
- Use rotisserie or store-bought roasted chicken for the chicken and dumplings to save time.
- Try using some fresh herbs for the dumplings — try a combo of fresh thyme, tarragon, and rosemary, or thyme and chives.
- Choose globe eggplants that are firm with smooth, shiny skin.
- Pumpkin liqueur in the tiramisu can be swapped with Baileys, Frangelico, or another nutty / warming / spiced liqueur of choice.
- You can always buy pre-made or frozen dinner rolls, store-bought guac, and some salad kits if you don’t want to make your own.

Meal Prep & Leftover Tips

15 Bean Soup: You could use bacon or diced ham instead of the ham hock, but you’ll be missing out on lots of free flavor if you go that route.

Chicken Fajitas: This meal is perfect for meal prep and can be refrigerated up to 2 days before cooking. Mix the spice mix and marinade, prep the chicken and veggies, then mix with the marinade in separate freezer bags or containers.

Mediterranean Salmon Bowls: Customize these to your liking. If you don’t like salmon, replace with chicken or meatballs. Sub the couscous for rice, quinoa, orzo, or any grain you like or have on hand. Use kale, spring mix, or other leafy greens instead of spinach. Toss in some chickpeas, your favorite veggies, hummus, and pita.

Easy Chicken and Dumplings: When cooking the dumplings be sure the soup is on a low simmer, so they don’t overcook. And don’t lift the lid while the dumplings are cooking as that will interrupt the steaming and prevent them from cooking evenly.

Eggplant Parmesan: Kosher salt’s larger crystals are best for salting the eggplant. It won’t dissolve as quickly as regular table salt, which will help draw out more of the excess moisture.

Pumpkin Tiramisu: I used Fulton Harvest Pumpkin Pie Liqueur, but if you’re having a hard time locating it, any creamy, warming liqueur like Irish Cream would work too.

The Best Dinner Rolls: This recipe uses rapid-rise or quick-rise yeast. I prefer rapid-rise because it’s fast-acting and cuts out an extra step and you can simply mix this yeast right into your dry ingredients.

Roasted Garlic Guacamole: Use a pastry blender to mash your guac. It keeps the avocados chunky and mashes super quick.

Shaved Brussels Sprouts Salad: Wash and trim your Brussels sprouts ahead of time. You can also go ahead and shave them a day or two before you make the salad.

Caesar Salad: I love finely grated Parmesan because it seemingly melts into all of the nooks and crannies. However, I also love chunks of Parmesan for their salty burst of flavor.
