Use my weekly meal plans to take the stress out of dinnertime! These premade meal plans and grocery shopping lists are the best way to save time and money while feeding your family healthy and nutritious meals. With a daily main course and mix and match sides, dinner just got a whole lot easier!

This week’s meal plan includes: healthier sweet and sour pork over rice with ramen noodle salad, chicken fajitas and Mexican coleslaw, creamy chicken and rice, penne pasta with Caesar salad, grilled Greek kebabs over lemon rice, and double chocolate zucchini bread!
To simplify your grocery shopping list:
- If pork isn’t your thing, you can sub with chicken for sweet and sour chicken!
- You can use canned pineapple for the sweet and sour pork, just make sure to use pineapple packed in juice rather than sugar-syrupy sauce. You can sub ground ginger if you don’t have fresh.
- To cut down on prep-time for the chicken casserole, use rotisserie chicken. Ground chicken would also work well, or you can use canned chicken or even sub in canned tuna.
- I used peas and carrots, but feel free to use whatever veggies you like in the chicken and rice — broccoli, cauliflower, squash, spinach, and green beans would all be yummy.
- Zucchini used in the kebabs and zucchini bread, and toss some into your sweet and sour pork!
- Skip the dry jarred stuff and grab a wedge of good Paremsan for the penne and Caesar salad.
- Cabbage used in ramen noodle salad and Mexican coleslaw.
- Bell peppers used in sweet and sour pork, chicken fajitas, and the Greek kebabs.

Meal Prep & Leftover Tips

Healthier Sweet and Sour Pork: This recipe is easy to prep ahead. Cut all your veggies and pork in advance, and the sauce will last up to 2 weeks in the fridge.

Chicken Fajitas: This meal is perfect for meal prep and can be refrigerated up to 2 days before cooking. Mix the spice mix and marinade, prep the chicken and veggies, then mix with the marinade in separate freezer bags or containers.

Creamy Chicken and Rice: If you have leftovers of this easy chicken and rice casserole, I recommend reheating them on the stove over medium-low heat and not in the microwave.

Penne Pasta with Easy Marinara: This penne pasta makes a great freeze-then-heat, make-ahead dish. Prepare the pasta to completion then freeze in individual portion containers to be warmed before eating later.

Grilled Greek Chicken Kebabs: These kebabs can be marinated, threaded on skewers, and refrigerated for the day before grilling. If you have leftovers, wrap them in pita with some hummus or tzatziki for a quick lunch.

Double Chocolate Zucchini Bread: To freeze this double chocolate zucchini bread, first let it cool to room temperature before sealing inside a freezer bag or wrapping it in a few layers of plastic wrap and freezing.

Mexican Coleslaw: I always make this ahead of time so the veggies have time to tenderize and soak up the flavors of the tangy lime dressing.

Caesar Salad: I love finely grated Parmesan because it seemingly melts into all of the nooks and crannies. However, I also love chunks of Parmesan for their salty burst of flavor.

Easy Lemon Rice: Long or medium grain rice works best for this recipe, but if you prefer using short rice, plan on it coming out a little more sticky.
